Pork chop, almond mole & plum.

It started with a trip to the Frida Kahlo exhibition at the Tate, followed by a serious hankering for Mexican food.

So we made mole. Ours is rich, dark and deeply comforting, with dark chocolate and roasted almonds, and an alkaline ash made from toasted chilli seeds and onion skins - a traditional technique that brings depth and complexity to the sauce.

Finished with smoked pork fat and our take on a salsa roja, made with the season’s best plums, their sweetness and acidity cutting through the richness of the mole.

IYKYK our pork chop is a dish we’ve never been able to take off the menu, but one that takes on a new personality with every season, and this is an iteration we’re particularly chuffed with 🍂

Yesterday I made my debut as a @thetimes columnist. Primarily to make mum and dad proud, but also to document our journey of opening @thepoetsmithfield in a way that felt too raw for @restosune back then. We’ve learnt a hell of a lot and I suspect have more of a reckoning ahead, but I’m so excited to being doing it together @speniilarge @charlieleonardsims

The first part – a British pub and dining room – opens later this year. And there are exciting plans in store when the rest opens in 2027.

End of Summer giving you back to school vibes and making you yearn for a fresh start and new challenge? Sune is hiring!

We’re looking for a passionate and experienced Chef de Partie and Section Waiter to join our tight-knit team at Sune.

We serve a regularly changing menu centred around incredible produce, creating food that is elevated but comforting, thoughtful and full of flavour, delivered to an exceptional standard.

We’re based in a beautiful canalside location at the bottom of Hackney’s vibrant Broadway Market. Our services are busy and buzzy, but we’re equally proud of the warm culture we’ve built across the team focussed on community, genuine work-life balance and pay for any overtime hours.

As Chef de Partie, you’ll work closely with our Head Chef, Fabien Spagnolo and be responsible for running your section to a high standard, helping us deliver brilliant food and memorable experiences for our guests. We’re looking for someone with solid CDP experience, great attention to detail and, most importantly, a great personality. Someone who enjoys working as part of a team, thrives in a busy environment and wants to be part of an ambitious neighbourhood restaurant.

As Section Waiter, you’ll exude warm and hospitality, and genuinely love the hum of a busy service. While wine qualifications aren’t a requisite, our dream colleague has a passion for tasting and learning about wine, and finding the best glass, bottle, or bottles (!) for our guests.

If either of these sound like you or someone you know, please get in touch at fabien@sune.restaurant (for kitchen) or charlie@sune.restaurant for front of house) taken in Sune Restaurant by @restosune

Introducing SIP SCHOOL, a three-part wine series from @sera__app & @restosune hosted by sommelier @honeyspencer_ and @sarahcwright

Long tables, three Monday nights, one journey through natural wine: first the myths, then the people who make it, then the food it’s made for.

Night one: No Drama. Monday 14 September. Every myth about natural wine gets a wine that disproves it: it’s all cloudy, it’s all funky, sulphites cause the headache. Honey is joined by @sarahcwright , assistant winemaker at London Cru, with food from head chef @fabienspagnolo .

Night two follows on 12 October, where a winemaker joins the table. The final night, on 9 November, is a tour through the villages of Beaujolais in the month the 2026 vintage lands, paired with pizza from a special guest chef.

Welcoming Chef Fabien @fabienspagnolo

Meet Fabien Spagnolo, our new Head Chef

Originally from Nîmes in the south of France, Fabien is a self-taught cook whose journey has taken him through some of London’s kitchens we admire most: Pollen Street Social, Frenchie, Casa Fofo and Crispin to name just a few.

On the run up to Fab joining the Sune troop, we were inundated by people telling us about this quiet culinary genius who they’d encountered, whose dishes had blown them away.

It turns out that Fabien’s cooking is a natural fit for Sune. Seasonal ingredients, hard-hitting, adventurous small plates that take you on a trip around the world, a considered, but distinct hand with spice.

While the faces in the kitchen may have changed, what we love about Sune is that it has continued to evolve since we opened on a cold, dark November night in 2023. Sune is still a neighbourhood restaurant shaped by the seasons, imbued by genuine hospitality from some of the most passionate individuals in the business. We are so grateful for our team, past and present, and even more excited for what’s to come. We hope you’ll join us soon to meet Fabien and experience his cooking. taken in Sune Restaurant by @restosune

!!SUNE SURPA!!

On Monday 3rd August, we are so delighted to welcome our friend and Georgian winemaker, John Wurdeman of the extraordinary @pheasants_tears alongside the team from @dakadaka.london to Sune for a one-off Georgian supra.

A supra is a near impossible thing to describe for those who never experienced one. First, there is the table. Ours - weather permitting - stretching from Sune’s front door towards the Regent’s Canal below, transforming strangers into neighbours. Then there is the food: dish upon dish arriving and layering across the table until the table itself disappears beneath the feast.

Throughout the evening, John will take on the role of tamada: the toastmaster who gently guides the rhythm of the feast through a series of heartfelt toasts. Together we’ll raise our glasses to family, friendship, love, peace, joy, sorrow, and all the things that make a life.

A supra isn’t simply a meal. It’s an expression of generosity, storytelling and togetherness, where every toast deepens the conversation and every shared dish brings people closer together. It’s a rare and deeply special tradition, and one we can’t wait to share.

Having been part of the journey of DakaDaka since its inception, travelling through Georgia with the team and curating the wine list - which subsequently won Best Short List in the UK at this year’s Star Wine List Awards - the opportunity to bring our two tables together for one evening at Sune feels particularly meaningful. Sune has always been a place for long lunches that become dinners and generous hospitality; it feels like the perfect home for this celebration of Georgian feasting and wine culture.

We’ll be setting the table for just 25 guests, sharing the evening as one table, just as a supra is intended. This event is expected to book up very fast, so please please book in early if you want to join us! (Link in bio) taken in Sune Restaurant by @restosune
