Back 40 Valentine’s Day Tasting Menu and Beer Pairing

At Back 40 Brewing, @russbodner flawlessly executes one of Birmingham’s most beloved burgers. When you think of Back 40, you might think of burgers, pizza, and beer. Each Valentine’s Day, though, they prepare a 5 course elevated beer dinner for guests. We enjoy is so much, we have now gone 3 years in a row!

As you walk into the back barrel room, wooden tables are adorned with flowers, cloth napkins, and a swath of utensils. As we sat down, sparkling rosé arrived at our table to begin the night.

Before the seated dinner began, a series of snacks were brought to our table, including various types of nigiri, yakitori (grilled chicken skewers), and pork belly skewers. Both skewers were slightly sticky with rich honey and soy flavors that paired nicely with a sake!

We were served our favorite dish of the night first, a lobster salad topped with shiitake mushrooms. Chef thoughtfully placed the lemon-soy dressing on the base of the plate and instructed us to mix the dressing into the salad. This kept the salad greens from becoming soggy.

Next, black cod, seasoned with coriander, was placed on top of a cauliflower puree. The fish was cooked to perfection and the cauliflower puree added a sweet component to the dish.

After the black cod, we were served rabbit ravioli. The al dente ravioli was stuffed with parmesan cheese and then topped with wild winter mushrooms and black truffles. There is no better combination of flavors!

The last savory course was beef tenderloin paired with roasted, garlicky potatoes and creamed nettles. The tenderloin was a large serving, however, we would have liked to see a tad more salt added. The creamed nettles were a great addition to the dish, with their mild parmesan flavor.

For our last course we were served strawberry shortcake, but with a twist, as the biscuit was chocolate. In between the biscuit was whipped vanilla cream and then topped with strawberries.

With each course, head brewer @rivalbrewvancey served various Back 40 beers. Our favorite, the Brr Baby White Stout! While it is not canned, you can fill a growler while this beer is on tap! by @rivalbrewvancey

🍺MEET THE BREWER: James Vance @rivalbrewvancey
James will be brewing the beer paired with our Carrot Cake with Pineapple Bourbon Icing, a dessert as bold and layered as his brewing journey.
When he’s not behind the tanks, James is behind the lens. He develops his own film and is diving into cinematography, always exploring new ways to capture craft and creativity.
His brewing story started in 2007 as a homebrewer, eventually taking him through the Southeast with Iron Heart Canning Co. before joining a Birmingham-based brewery, where he worked his way from cellarman to Director of Operations. Now in his third year as Head Brewer at @back40bham , James continues to blend precision and artistry, one pint at a time.
Favorite style: “I honestly have no idea because it changes all the time, but if I had to choose one beer to drink for the rest of my life it would probably be a Märzen or Vienna Lager. A little malty but clean. Refreshing, yet with a bit more body and depth than lighter styles. Overall, I’m a big lager fan in general.”
Favorite pairing: “A cold beer and the feeling of having clocked out for the week. Haha.” Trust me, you don’t want to miss this delicious pairing! by @rivalbrewvancey

Here's a few of the photos I took from the second installment of Seasick Sessions. For those of you who don't know, I've been working on building a series of shows here in Bham where we get local musicians and DJ's together and record them to make a vinyl album at the end of each year to showcase some of the best local talent around (Eventually, I would like to include local stand-up comedy as well). Each show is also sponsored by a different local brewery, and hopefully soon by a different food truck or restaurant as well. This is part of a series I promote through @beerminghamusa, a local non-profit that is trying to help grow Birmingham as a nationally recognized beer destination city.
