Our Apple of the Week from @scottfarmvt is Karmijn de Sonnaville, a rich aromatic apple with notes of nuts & honey and a firm, juicy bite! Try it in a delightful savory apple tart with local Cabot cheddar:

Ingredients

1-½ cups whole wheat pastry flour
1-½ cups unbleached flour
1-½ tsp salt, divided
2 sticks unsalted butter, chilled, plus 2 extra tbsp
1 cup ice water
3 lg onions, thinly sliced
2 tbsp fresh thyme, chopped
1 tbsp Dijon mustard
½ tsp pepper
8 oz sharp cheddar cheese, shredded
4 large baking apples, peeled and sliced (6 cups)

Prep

1. Heat oven to 400°F. Get out a rimmed 10x15 baking sheet.

2. For crust, whisk together the flours & 1 tsp of salt in a large bowl. Cut 2 sticks of chilled butter into cubes. Work the butter into the mixture quickly with your fingers until crumbly, but small chunks of butter remain. When the butter and flour are combined, toss the mixture gently with a fork while drizzling in ice water. When all the water is in, begin mixing and gently squeeze with your hands until dough is formed. Scrape onto a floured counter & shape into a rectangle. Let the dough rest for 30 min.

3. Roll out the rested dough until it is 1" longer and wider than the pan. Gently fold the dough in half and place on the pan, then unfold. Pat the dough into the pan and fold under any extra dough at the rim. Cover with foil & bake for 20 min.

4. For filling, melt 2 tbsp of butter in a large saucepan over medium heat. Add onions and thyme and cook, stirring frequently until the bottom of the pan is coated with brown reduction, about 5 min. Add 2 tbsp of water and scrape up reduction with a wooden spoon. Repeat cooking, adding water and scraping up browned bits until onions are softened completely and have a deep brown color, about 15 minutes. Add ½ tsp salt & pepper. Remove from heat.

5. To assemble the tart, spread a thin layer of Dijon mustard on the prepared, cooled crust. Top the mustard with the browned onions, then cover with sliced apples. Sprinkle shredded cheddar on top and bake for 25 min, until apples are tender and cheese is melted and golden. Place on a rack to cool. Serve warm or let cool and refrigerate, tightly covered, up to 3 days. by @rivervalleycoop

This Thursday at 7pm, Ally Beale, homeopath and lead author of the "Homeopathy Primer: Getting Started with Homeopathy," returns for another free virtual workshop! This time, we will learn how to successfully match symptoms with a homeopathic remedy.

Homeopathic medicine is powerful. It takes into account the whole person, considering ALL of one's mental, emotional and physical symptoms. Because each person suffers from their health conditions in their own unique way, it’s important to know how to tease out the most useful symptoms for an ailment that best matches an appropriate homeopathic remedy.

So how do you gather the symptoms for homeopathic case taking? Using good observational skills and asking targeted questions are key. In this webinar, you will learn how to use the CLAMS acronym—Cause, Location, Additional Symptoms, Modalities, and Sensations—to help guide you with your acute case-taking. Come curious and be ready to take notes!
