While we were choosing coffees around the cupping table at El Fénix, I had my eye on a Sidra that was still out on the drying beds.

By the next morning, most of the group were heading for their flights, but mine wasn’t until the evening. I asked Miguel if we could taste it, and a sample from the drying beds became a morning of milling, screening and understanding a little more about how coffee is bought and sold in Colombia before we finally roasted and cupped it. Lucky I had a late flight

That’s the story behind our shiny Archaeopteryx, and I’ve written it up in The Coffee That Wasn’t on the Table, now on Roastersaurus. Link in bio. by @roastersaurus

Snippets from El Fenix, taken the same days I discovered and sourced both Guadalupe Pink Bourbon and Sidra ✨. Yes, I chose both of them over the geishas I was roasting in this video 🦖😂

But hey… doesn’t mean I won’t be hunting for those little geisha hatchlings for next year 🦕 by @roastersaurus

Nearly sold out of the Sidra from @elfenixcoffee, and haven’t even gotten to start telling its story. So let’s get this party started with a picture from my arrival at El Fénix, and my introduction to these beautiful sidra cherrys and their coffee flowers ❤️.

P.S. Coffee only starts shipping tomorrow and I’m more than 90% sold out so grab yours quick. 😳🦕🦖 by @roastersaurus

My birthday felt even more magical and unforgettable with you by my side. 🎂🥂 Thank you, My Mor, for filling my life with so much love, tenderness and happiness. I’m endlessly grateful that we’re together and that I get to share these beautiful moments with you. You made my birthday truly special and made me feel cherished beyond words. I love you more than words can say. ❤️ by @roastersaurus

Time to face the music.

To be crowned cafec UK brewers cup championship 2026, competitors must display brewing skill in the moment.

It is one thing to create and brew the best recipe over a few weeks, but it is another to brew a coffee they've never seen before.

It is only right that this coffee is top tier, and so the finals coffee sponsor is none other than 2x SCA UK roasting champion @roastersaurus

Sourced, roasted, QC'd by one of the very best.

Oh, and the coffee only drops on competition day 😉

Good luck! by @roastersaurus

Our first shiny Archaeopteryx has landed, and she's dressed for the occasion.

Tropical. Rose. Afterglow.

This anoxic washed Sidra takes us back to El Fénix in Calarcá, Quindío, where I spent three days with Miguel Fajardo Mendoza during my Colombia trip. I even had "rose lassi" and "passionfruit party" in my personal cupping notes for this one, with lovely weight behind the bright fruit and a passionfruit finish that kept going. She has plenty of Slipwing movement, but those claws have a Stomp in them too.

I love how @kitsukaizen has turned our Archaeopteryx into a phoenix for El Fénix, blue and rose-pink with a little extra shine. Every so often, an especially rare and distinctive coffee gets the shiny treatment within its own class, and this Sidra is the first Archaeopteryx to wear it.

200g packs, each with her shiny card, are available now. I've also brought back a small held-back batch of Guadalupe's Pink Bourbon to sit alongside her. Coffee and lore through the links in bio. by @roastersaurus
