The first curry that I ever made was under the guidance of Skye Gyngell. She taught me to balance flavours properly, to try combinations I'd never considered and it has stuck with me every since. Her lobster curry with coconut sambal was a staple on the menu at Petersham Nurseries and then came with us to Spring.

This is grilled monkfish, Keralan curry & tomato sambal, recently on the menu at Spring.

Absolutely delicious food cooked by two of my favourite people, Sarah and Lloyd, at Heckfield Home Farm. Celebrating Skye Gyngell and the wisdom she passed on to those lucky enough to be on the receiving end. Such a beautiful setting, surrounded by the biodynamic farm… completely magical.

I am so heartbroken that Skye has passed, and I will miss her more than I can ever say. Working with her for the past 15 years has been a privilege.

Skye lived a huge, generous life and touched so many people along the way. Her greatest legacy is her children and her grandchild, and my thoughts are with them and all of her family.

She had an extraordinary life of influence, one that will continue to guide and inspire all of us lucky enough to have known her. I loved her dearly, as a person and as a boss. She was brilliant, a force, generous, fair, and endlessly supportive.

Her trust and guidance shaped every corner of my life and gave me a strength and confidence I carry with me still. She showed me the beauty in food, the respect it deserves, where it comes from, and the true cost of it. She carved out a path I didn’t know existed, one I will continue to follow for the rest of my days.

She will always be my guiding light.
