On Thursday, 20 August, we hosted a special tasting at Waterford Estate with winemakers and viticulturists from Waterford, Rustenberg and Hartenberg, in collaboration with Return on Ecology.

Each producer brought two wines made from the same cultivar and vineyard block: one farmed using regenerative practices and one without. Through a blind tasting, we explored aroma, flavour, intensity and texture, while sharing observations from the vineyards.

The day was less about finding definitive answers and more about staying curious. At Waterford, regenerative farming is about bringing more life into the vineyard through cover crops that nurture and protect the soil, and our Dexter cattle grazing between the vines and returning nutrients to the land.

As soil scientist Bennie Diedericks reminded us: “Everything is connected.” We know there is science behind these complex living systems, even if we cannot yet measure every interaction. Perhaps that is part of the magic, the complexity of an ecosystem working as a whole, rather than as a collection of separate parts.

The day was a reminder that regenerative farming is a journey of observation, experimentation and learning.
