*Rhubarb and Ginger Crumble Cake*
*Serves 8*

---

*For the crumble*
125g plain flour
4 tbsp caster sugar
90g butter, plus extra for greasing

*For the rhubarb*
500g rhubarb, cut into 1 cm pieces
2 tbsp caster sugar
1 tsp ground ginger

*For the cake*
175g butter, softened
175g caster sugar
3 eggs, beaten
175g plain flour
1 tsp baking powder
1 tbsp milk

---

*Method*

Oven on 180 C

Make a simple crumble topping with the flour, sugar, and butter. Rub in the butter until it forms a crumb like texture.

Cut the rhubarb and simmer it in a pot with the sugar and ginger and cook until soft.

For the cake, cream the butter and sugar, then add the eggs, flour, baking powder, and milk.

Spread the batter into a tin, then top with the rhubarb mixture and crumble.

Bake for about an hour until golden and set. Allow to cool slightly. Serve with whipped cream.
