I know we haven’t seen the sun here in the UK since last year, so I thought now would be a good time to reminisce of the times when we did see a bit of blue skies. Thursday 7th September is the ONLY day remaining with space on our Sunset Catamaran Cruises for 2023! What is included: - 3 hour cruise, fully crewed cruise on a 44ft Catamaran sailing around the beautiful Poole Harbour. (Think ‘Below Deck’, apart from the fact that we know what we are doing). - A delicious 5 course SALT Cø. Tasting menu sampling the best of what we are sailing above that evening. - A beautiful sunset, similar to this one from one of the cruises we did earlier this year. - A complimentary glass of fizz upon arrival. All for £150 per person. Fancy it? Get in contact. It is already very nearly sold out, so I’d get in contact sooner rather than later to avoid disappointment: 07742502799 dine@salt-co.co.uk Comment below Or Messenger. I look forward to hearing from you. G by @salt_co_chef
CLUB CASITA X SALT CO CHEF 👨‍🍳 You can now book the wonderful Christian @salt_co_chef to come and cook for you when you stay with us! Impress your friends and family with a special dinner in one of our stunning riverside retreats. Salt Co offers 7 course, bespoke menus -which of course we had to try before recommending to you. We took full advantage of the tailored catering and created the perfect menu for our fussy group. The food was delicious (our favourite was the steak tacos 🤤) and Christian was the best host, super relaxed, friendly and even did the dishes! Pop us a message if you’re interested in booking a Salt Co Dining Experience during your stay ♥️ Captured by @salternscreative 📷 by @salt_co_chef
Have I mentioned how much I love Halloween?! This was how the last night’s guests were welcomed to our Chef’s Table! They were a loud bunch! I love it with a bit of energy around a table. Having cooked for Z, C, S and G before I knew it was going to be fun. Lots of fun! The lighting set up in my kitchen wasn’t conducive for food photography so you will just have to make do with the menu: - Special SALT Cø. Halloween Bread (you squeeze the bread and the butter oozes out). - “Witches Couldron” Pumpkin Broth with Tasty Bits in… - Smoked Jumbo King Prawn, Carrot cooked in Prawn Stock for 4 hours, Aerated Prawn Bisque, Apple and Chive Dressing. - “Bloody Steak” Pan Roasted Smoked Sirloin Steaks, Braised Beef Shin, Roasted Cauliflower, Beetroot and Beef Jus. - Trick or Treat Chocolate Course…do you think they got the Brussel sprout ones or the dark chocolate and raspberry ones? (They were ALL Brussels sprout 🤣🤣) - “Death by Chocolate” Dark Chocolate Mousse, Bleeding Heart (liquid raspberry centre), Roasted White Chocolate, Chocolate Caramel Sauce. - Nice Petit Fours. by @salt_co_chef
Who says the children should have all the fun on Halloween?! by @salt_co_chef

Many of you have met this lady now. For those who have not sampled her cooking, this is Chef Marnie/ Margret. There is a saying that “if you can’t stand the heat on the kitchen, get out!” It turns out that Marnie very much CAN stand the heat, and deals with the stick that I give her on a near daily basis really quite well. That said, she is planning on cooking down next week by taking a trip up a mountain. She is hoping for sponsorship so she can utilise her gap year and go travelling in the new year…(we are very busy until then so I am not letting her go). You can fund her freedom at the following link: https://gofund.me/42a5fa5ce Go be free Little Bird…but make sure you are back in time for the busy times… by @salt_co_chef
The triumphant return of the SALT Cø. Jazz Hands Selfie at a Chocolate Demo at East Dorset Sailing Club last night… I say triumphant…instead of doing a video I pressed photo…#usererror The good news is that the demo and all of the chocolate was enjoyed! When are we coming to you to do a chocolate demo? by @salt_co_chef
Last night was…I don’t know the right word to explain it… It was great, but it was unique in the way that I have cooked many times now with D&J in their home, but last night was the first time we have done a SALT Cø. Dinner. We have done multiple cookery classes and last night D fancied doing some of the prep. I am very happy to report that the cookery classes have paid off! His knife skills were ON POINT! Well done Chef! Last night we cooked: How does this sound as a first draft of a menu for you?: - SALT Cø. ‘Cornetto’. - Cheese Souffle, Aerated Cheese Sauce, Toasted Seeds, Herb Oil. - Pan Fried Crispy Skinned Bass, Beetroot and Apple Chutney, Beetroot and Cider Broth, Herb Dressing. - Palate Cleanser. - Pan Roasted Smoked Sirloin Steak, Fondant Potato, Persillade Dressing. - Coconut Mousse, Coconut Granita, Dark Chocolate, Coconut Marshmallow, Mango Sorbet. - Petit Fours When are we cooking for you? by @salt_co_chef
I have mentioned The Coleman Family multiple times in my posts as they are simply just a glorious family: Parent H&I have been supporters of SALT Cø. from the beginning, I worked with H prior to setting up the businesss, I have cooked for the whole family from grand parents to great grand children as well as friends on multiple occasions, H&I amazing parenting have create 3 incredibly boys (all grown adults 2/3 having their own children. If I was to want Theo to become anyone I would happily choose any one of their boys) George (youngest son) was a SALT Cø. Sous Chef for a while and did a great job (we did canapés for 120 people just the two of us (host had put on two more helpers for us who we didn’t see the whole time we were there), amongst many other dinners. Friday night we cooked for George, his lovely fiancée and a bunch of their friends. I was not surprised to see that they were all just an extension of themselves. Great people, fun evening, nice food and they looked after us very well as well. As per usual at a dinner for the Colemans… On Friday we cooked: - SALT Cø. Bacon Taco. - Ham Hock Terrine, Piccalilli, Toast. - Pan Fried Crispy Skinned Bass, Roasted and Crushed Squash, Aerated Fish Sauce, Herb Oil . - Palate Cleanser. - Pan Roasted Smoked Duck Breast, Surprise Garnish.Creme Fraiche Mash, Persillade Dressing. - Smoked Dark Chocolate Mousse, Raspberry Pate de Fruits, Creme Fraiche Sorbet. - Petit Fours. ALWAYS a pleasure guys, can’t wait for next time! When are we cooking for you? by @salt_co_chef
I am very aware that all my posts are “how perfect things are” and how things “never go wrong when we are doing things… I’d like to show you that every once in a while things don’t quite go to plan… Yesterday I was measuring ingredients out as I regularly do…but all of a sudden, my scales were not where I had left them…I searched along my work top, could not find it. Looked in the places it “shouldn’t” be, they weren’t there either… Look where I found the scales… Thankfully I have back up scales… by @salt_co_chef
Talking from the perspective of someone who has been to every single Chocolate Demo we have done, I can tell you these are a LOT of fun. I mean who honestly doesn’t like Chocolate? If you are yet to come to one of our Chocolate demos, or you’d like to come to another one, come along next Tuesday to East Dorset Sailing Club (at the bottom of Evening Hill in Lilliput) for a tasting and a fun informative evening all about Chocolate! And see one of the nicest views in the whole of Dorset. There are only 5 spaces left, no need to be a member, pay on the door (but you need to let us know if you are coming before hand as we are already nearly at capacity).
