▪️1 tsp Salt
▪️6 tsp Ghee
▪️1/4 cup Mild hot Water ( approximately )
▪️Ghee for Frying
🌶️For the Paste :
▪️2 tsp Rice Flour
▪️4 tsp Ghee
👩‍🍳Method :
1. In a parat, add the flour, salt, melted ghee and mix well.
2. Slowly add enough mild hot water to make a smooth yet firm dough.
3. Cover with a damp cloth and rest for an hour.
4. In a small bowl , mix rice flour with melted ghee and keep aside.
5. Pinch off dough such that you have 6 large lemon sized balls.
6. Roll each into thin rotis.
7. Place a roti on your work surface, smear a tsp of the prepared rice flour paste all over the roti.
8. Place another rolled roti over it and again smear with a tsp of rice paste.
9. Place a third rolled roti over it.
10. Now gently roll the piled up rotis into a log and cut into 1/2 inch thick circles.
11. Make another log following the same process using the remaining three rotis.
12. Flatten the thick circles with your palm anId roll them like thick puris.
13. Air dry on a mulmul cloth for 30 minutes.
14. Heat ghee in a heavy bottomed kadai.
15. Once hot, reduce the flame to low and place 3 - 4 rolled chirotis.
16. Deep fry on low flame, flipping them gently to cook all over.
17. Once golden brown and crisp remove on an absorbant paper.
18. I like it this way, but you can sprinkle with powdered sugar and enjoy.
