Meet Chef Adolfo Tigerino. His root to stem cooking is applied to all the pop ups we do. We continue to be as low waste as possible by utilizing everything from the ingredients we use. His seasonal style and diverse culinary background helps shape and create the menus to show you what the Pacific Northwest has to offer. His creativity and passion for Italian cuisine brings a fun twist to the traditional dishes we highlight. We can’t wait to show you what the season has to offer on Monday, Oct. 19 at Norah (Alberta location). Meet our pasta Chef Coleman Kaestner. He has a vast knowledge of Italian cuisine and brings his expertise of pasta making into each one of our pop ups. His unique creative and traditional approach to Italian cooking brings an incredible invaluable insight. Coleman draws inspiration from his upbringing and travels to help curate and create each menu. Primarily focusing on mixing southern Italian traditions with New York traditions. We can’t wait to show you what we’re cooking up for this fall menu. See you on Monday, Oct. 19. Our dessert reveal is here for our pop up on Monday, Oct. 19 @norahpdx (Alberta location). Reservations available via link in bio. Our autumn pop up is this upcoming Monday, Oct. 19, @norahpdx (Alberta location). You can reserve your spot via link in bio. We’re going with some comforting fall vibes with our ciambotta d’autunno and tortellini in brodo. Nothing says more cozy than a delicious slow cooked stew with astiana tomatoes, honeyboat squash, cucuzza, carrots, pumpkin, butternut and honeynut squash. It’s a beautiful way to celebrate the fall season. Our tortellini in brodo is a creamy delight in a delicious slow cooked vegetable broth. We can’t wait to see you for this one and for dessert we have a special surprise for you. You’ll just have to see. 🥣 🍜 🥣 ~ portland dining ~ portland dinners ~ this is portland ~ seasonal Italian dinner ~ pacific northwest ingredients ~ seasonality ~ fall dinner ~ portland pop ups ~ farm to table ~ #thisisportland #scopripdx #pdxeats #pdxpopup #pnwlove by @scopripdx
We’re popping up on Monday, October 19 @norahpdx (Alberta location). Reservations on link in bio. We hope to see you there! Although we try not to repeat dishes, some dishes we fall in love with that we do some tweaks here and there to give a fresh feel to it. Like when we kicked off our pop up series we did an amuse-bouche of a cappelletti in brodo di carote (second photo). We really wanted to revisit pastas in broth for our fall pop up. Since they’re cozy delicious and bright. You can’t go wrong with it. This is our tortellini in brodo. The tortellini are stuffed with a soy ricotta and served with a slow cooked vegetable broth. We will top it off with a hazelnut parm. If you haven’t dined with us before, we have a set of five courses but with some surprises in between. We are absolutely ecstatic over this menu and can’t wait for you to try it. 🍝 🍝 🍝 ~ this is Portland ~ Portland dining ~ Portland pop ups ~ Italian dinner ~ Pacific Northwest food ~ farm to table ~ low waste cooking ~ #scopripdx #tortellini #pdxpopup #thisisportland #pnw by @scopripdx
We pop up on Monday, Oct. 19 @norahpdx (Alberta location). We’re taking reservations for 5pm or 8pm via link in bio. We’re absolutely thrilled to show you what the season has to offer. We’re bringing ciambotta d’autunno which is a beautiful slow cooked stew made of cucuzza, potatoes, carrots, astiana tomatoes, san marzanos and a variety of seasonal squashes (pumpkin, honeyboat, honeynut, and butternut squashes). It’s a perfect stew to celebrate the changing seasons from summer to autumn. We really wanted to do a little throw back to one of our first pop ups where we did cappelletti in brodo di carote as an amuse-bouche. So we’re bringing a tortellini in brodo. It’s a soy ricotta stuffed tortellini served in a light slow cooked vegetable broth. Topped with hazelnut parm. It’s creamy, light, nutty and savory goodness. We look forward to you trying it. We’re also going to be bringing a fun oreganata. We’re doing it with chanterelles. We’re coating them in breadcrumbs and oregano then cook them till golden brown. Serving it over a creamy cauliflower purée. It’s earthy, creamy, and crispy. So good. As for dessert. We’ll let you know in the days leading up to it. If you haven’t dined with us before, we love to throw a couple fun surprises between courses to continue the good times and celebrate the season. Hope to see you @norahpdx on Monday, Oct. 19. 🍝 🍝 🍝 ~ this is Portland ~ Portland dining ~ Portland pop ups ~ seasonal ~ eat with the seasons ~ support small farms ~ local food ~ Italian dinner ~ low waste dinner ~ farm to table ~ Pacific Northwest food ~ #pdxpopup #pdxitalian #scopripdx #pnw #pnwfood by @scopripdx

Summer is here and all the beautiful produce is out. Tomatoes are everywhere now and we could not be more excited about it. Sweet, savory and delicious. Incredibly hydrating on these hot summer days. This is our caprese salad for our first summer pop up this Sunday @malpractice.pdx. It features a few varieties of tomatoes that include early girls, heirlooms, indigo, and sungold tomatoes with a coconut-cashew mozzarella. Topped with basil and finished with @durant_oregon’s extra virgin olive oil. You can reserve via link in bio. We’re all filled up for 5pm, but have a few openings for 8pm! If you haven’t been to our pop ups before, you should expect a couple surprises in between some of the courses to highlight what the season has to offer. Everything is seasonal and made in-house. We look forward to Sunday. We hope to see you there! 🍅 🍅 🍅 ~ seasonal Italian food ~ summer menu ~ this is Portland ~ Portland dining ~ portland pop ups ~ Pacific Northwest produce ~ support small farms ~ local food ~ low waste cooking ~ #scopripdx #thisisportland #pdxdining #pdxeats #pdxpopup by @scopripdx
