🇬🇾 Guyana Style Fish and Chips! 👩🏽‍🍳Fried Bangamary with Plantain Fries.

Fish: 7 bangamary fillets cut in half. Seasoning: Salt, Pepper, Garlic, All Purpose Seasoning, Lemon Pepper, Thyme, Sazon.
After marinating I dust with flour that is seasoned with the same spices above.

Plantain: Salt, Chief Chowmein Seasoning Mix

Fry until golden brown and enjoy traditionally with pepper sauce mixed with ketchup.

For a fresh side I sliced up 1 mango with 2 baby cucumbers from our garden with salt, hot pepper sauce and lime juice, finish with cilantro.

Roasted Tomato Soup is heartwarming and delicious paired with a perfect grilled cheese! I used a carton of Campari Tomatoes and 4 medium roma tomatoes, 1/2 large red onion, 1 carrot, 1 bulb of garlic. Toss everything in olive oil, salt & pepper, Italian Seasoning. Roast in oven 375f 45-50 minutes. I added 2 cups of water and additional seasoning (you can use broth also), a pinch ot sugar and a tablespoon of tomato paste. I puréed it with an immersion blender. Simmer for 15-20 minutes, finish with grated Parmesan and fresh cream.
I used croissant toast for my grilled cheese with sharp cheddar and mozzarella. Bon appetit! 👩🏽‍🍳
