The soup I shared in my stories yesterday. SO good. 🤤

Creamy Chicken Gnocchi Soup

Ingredients:

- ½ cup butter
- 1 medium yellow onion, diced (about 1½ cups)
- 2 cups carrots, diced
- 4 cloves garlic, minced
- ¼ cup flour (I used whole wheat)
- 1 carton chicken broth (around 4 cups)
- 3 cups cooked chicken, shredded
- 1 package (500 g) potato gnocchi
- 3 cups half-and-half cream
- 2 cups kale, finely chopped or shredded
- Salt & pepper to taste
- Optional: Cajun seasoning & red pepper flakes (I like mine spicy)
Instructions

1. Melt butter in a large pot over medium heat. Add onion and carrots and cook for 6–8 minutes, until softened.
2. Add garlic and cook for 1 minute.
3. Stir in flour and cook for 1 minute
4. Slowly stir in chicken broth. Bring to a gentle simmer and cook for 5 minutes.
5. Add chicken and gnocchi and simmer for 4–5 minutes, until gnocchi are tender.
6. Reduce heat and stir in half-and-half. Cook for 3–5 minutes.
7. Stir in kale and cook for 2–3 minutes, until wilted. Season with salt and pepper to taste. (Cajun seasoning as well if adding)

#ad I spend so much time reminding everyone else to drink water that I realized I was forgetting about myself. 😅
Lately, one small habit that’s been easy to stick with is adding Landish Aqua Electrolytes to my morning routine. I love that it’s made with coconut water, marine minerals, and no refined sugar or artificial sweeteners. Plus, the tropical flavour is SO good, and the bright aqua-blue colour makes it feel like a little treat. It’s such a simple way to prioritize my own hydration while juggling busy mom life. 💙 @landishfoods #landish #LandishAquaElectrolytes #sponsored by @seelaurelbloom

There seems to be a course for everything mom related these days & while they can be super helpful… it can also create this feeling like unless you’re doing things a specific way you must be doing it wrong.

So I decided to rely on something ancient instead… something women have done for thousands of years long before AI & the internet…

I asked for advice from REAL moms who have been through what I was about to go through & combined that advice with my own mother’s intuition of my sons specific needs as well as our lifestyle (long drives, a lot of outings).

(Slide for details under next photo caption) →

Here’s what we used:
- chocolate chips & stickers for rewards (sticker for sitting on the potty even if he doesn’t pee, 1 chocolate chip for using his mini potty to pee & 2 chocolate chips for making it to the bathroom & peeing in the big potty)
- diaper for night time and nap
- Dog training pee pads to protect the couch for the first few days. I’ll use these in his car seat too once I don’t use training diapers for drives.
- Mini portable potty to bring when we have long drives (this was also great for day 1-2 before he could make it in time to the bathroom)
- Potty training pull-on diapers for long outings & daycare
- Undies for when we’re home

→

Here’s how we’ve done it so far & how it went:

Day 1: started in the evening after daycare. No pants, no undies, no diaper. He had 4 pee accidents & went on his mini potty 1 time.

Day 2: started the day with no bottoms on. 2 pee accidents in the morning. 3rd pee he went to his potty by himself. 4th pee he started to go but stopped & went to his potty. 5th pee went potty by himself. Diaper on for nap & then we had a dinner out so we put him in a diaper. He has the type of personality that would likely feel shame having accidents in front of others & we want to respect that.

Day 3:
We had breakfast out first thing in the AM (he had already peed in his diaper prior to getting up) our way home from breakfast he said he needed to pee, when we got in the door I took him to the bathroom & he peed. Peed again in toilet before nap. Diaper on for nap. Peed in toilet 3 more times that day & had 2 accidents later in the by @seelaurelbloom
