Ready to taste autumn, the Canarian way? 🍂🌟

At @bahiadelduque, chef Lucas Ordóñez is giving seasonal ingredients an unexpected Canarian twist.

Think roasted pumpkin cream with caramelized pine nuts and smoked Canarian cheese ice cream. Persimmon meets marinated mackerel and orange gel, while wild boar risotto comes with roasted apple mayonnaise.

And it doesn’t stop there. Candied pear with nut Chantilly and dark chocolate, or delicate buñuelos filled with chestnut cream, bring the season to a sweet close.

The result? A celebration of autumn flavours, with the culinary diversity of Tenerife at its heart.

I’ve wanted to go on safari for years. Now that I finally have, I still don’t quite have the words for what we experienced.

Watching these animals move through their own world, sometimes only a few metres away, was more extraordinary than I had imagined it would be. I kept putting my camera down just to look.

Deeply grateful that I got to see this with my own eyes.

At some point I’ll have to find the words for the article. For now, these will have to do.

Neueröffnung des Monats im aktuellen Feinschmecker: Yannick Alléno prägt die Küche – und eine Ikone der französischen Riviera feiert Comeback! Audrey Hepburn, F. Scott Fitzgerald, Winston Churchill – die Gästeliste des Hauses las sich schon immer glamourös. Seit 1914 stand das terrakottafarbene Grandhotel Le Beauvallon am Golf von St. Tropez für exklusive Sommerfrische, diese Saison war große Wiedereröffnung. Gastronomisches Herz des Hauses ist das coole Beachside-Restaurant „Beauvallon Sur Mer“, dessen Karte, wie das gesamte kulinarische Konzept des Hotels, Alléno schrieb. Unbedingt probieren: Ceviche von der Dorade Royale mit Koriander, Mu-Err-Pilzen und cremigem Kokosdressing und Tatar von der Gelbschwanzmakrele mit Erdnuss und Thaibasilikum-Eis. Spicy Thai Salat mit Rindfleisch überzeugt mit perfekt austarierter Schärfe im Dressing, wie überhaupt alle Vorspeisen durch exzellent aromatisierte Saucen und Vinaigrettes glänzen. Hauptgänge kommen vom Grill, etwa der saftige, auf den Punkt gegarte Wolfsbarsch für Zwei, auch hier trumpft Alléno mit seinen schlanken, aromenintensiven Saucen auf, allen voran intensive Kampot-Pfeffer-Sauce.
