Born and raised in Mexico City, Enrique Díaz is the founder of @fiestafarmjpn Fiesta Farm, where he grows produce for Mexican cooking in Japan without pesticides and with organic fertilizer. The @embamexjp Embassy of Mexico first introduced Enrique to the @arriolakanada family while we were living in Kyoto. Since then, he has become a trusted culinary purveyor, producer, farmer, and collaborator in shaping the inaugural Nourish @nourishtokyo during @tokyosalone gathering. Recently, we joined Enrique and the Díaz family at Fiesta Farm for a very special experience. We cannot share what brought us there until October 7, but it was an honor to take part alongside his family, neighboring farmers, and the film crew who documented the day. Our deepest thanks to @j_duron_ of @masa______j who has been working with us in close collaboration. The whole team building Nourish, @justinkhanna and @ryohaga__ are very excited to share his experiences with @pablosotor of @nomacph joining from Copenhagen, and @thisislucho who will travel from Mexico City to be alongside us. Huge thank you to everyone helping this story move from the field into the world. Once it airs in Japan, we look forward to sharing it with our wider community on YouTube. For now, we celebrate Enrique: his generosity, his knowledge of the land, and the extraordinary work of creating a place for the flavors of Mexico to take root in Japan.
