Think oysters are the only shellfish worth shucking? Think again.

Today we had the chance to learn from Shucker Paddy, a Guinness World Records shucker, as he showed us how to shuck the perfect PEI hard-shelled clam (quahog).

With a little technique and the right touch, these sweet, briny clams open to reveal one of the freshest tastes of PEI’s cold waters. It’s another delicious reminder that our Island is home to so much more than world-class oysters.

Would you try a freshly shucked PEI clam?

Follow along as we share more tips, tastings and the incredible people behind Canada’s Food Island. taken in Prince Edward Island, Canada by @shuckerpaddy

Friday Night (Oyster) Knife Fight
@galwayoysterfest @anpucan

The night before The Big Show is always the last contest of the year… to determine the Irish National Champion.

This year I had the pleasure of hosting the nationals with this gregarious fella @marcus.olaoire
#NoFunWasHad

@anpucan pulled out all the stops in this cosy little pub upfront… But you never know what’s waiting behind

Walk this way… mind your step, and look out for the Oyster Shuckers always in the way…
@anpucan @galwayoysterfest @livingtheshuckingdream @marcus.olaoire

Fabulous Shuckin’ Venue! @anpucan @galwayoysterfest

The task at hand…

The Ostrea edulis Oyster tends to be one of the more technically difficult Oysters to open.
This contest is of 30 Oysters timed and then judged for cleanliness.
You must arrange the 30 in nice neat rows on the wooden tray provided.
5 min = nice to have you over for a visit
4 min = it’s a good start…
3 min = contender
Under 3 min = top 5 to finish
#SoYouThinkYouCanShuck
@galwayoysterfest

…but first, we warm up. These are four of the international contenders a great moment to watch technique and have a conversation before the big show.
@galwayoysterfest

@fredrik_lindfors representing England and 2001 World Champ
@nottinghillfishshop

@borisnoordvanden - New to this stage! Welcome - representing Belgium!
Big hands - good grip on the oyster!
@galwayoysterfest

@ostron.martin - veteran of 15 years - the focus, the smooth shucks
@galwayoysterfest

@teng.choon.9 Shuckin’Around for Singapore - since the late 1900’s (like me!) vintage!
@galwayoysterfest

Concentration - Shuckers, Are you Ready?!
@galwayoysterfest

All about the angles….
Timers are you ready?!? @galwayoysterfest

Goals…

3.2.1.Shuck!
While the start, and midst shucking and aligning, the Oysters is difficult enough… shuckers must reach for the bell and ring to finish… so best not knock that thing over, have it in a good position for a short grab.

Friday’s Lunch & Learn @galwayoysterfestival

The day before the festival - you have options to venture out to the water - visit and meet with Oyster Farmers @dkconnemaraoysters @flaggyshoreoysters @kellyoysters
This year I opted for the Oyster Restoration and Midden walk with @cuanbeo
Midden = older - ancient communities’ kitchen refuse pile. Anything left from the hearth - shells, bones, ash & some charcoal.

This particular midden was found when new home was being built. This extends 600 feet long and 6 feet deep in some places. Representing thousands of years of stacking shells.
@cuanbeo

A dry stack stone wall and tree crown this corner of the mitten. Exposed during a storm surge a couple of years ago.
@cuanbeo

The layering here looks almost intentional to be as flat as possible. The base of this corner has been carbonated to 4500 years.
just the size and numbers of oyster shells that are seen is staggering.
Meaning Oysters have sustained this community for 4000+ years…
Only the fairies know how long ago…
@cuanbeo

To gather Oysters people would’ve launched from this shoreline…

Locals flat bottom, Oyster skiff. A two person work boat used for dredging Oysters from Galway Bay.

The Oyster dredge was used to bring up more Oysters but needed two people to work it.

Flat bottomed to work the shallows and a shelf to rest the dredge and grade the oysters.

As described here, one would row and control the boat whilst the other would drop the dredge. Both would be needed to bring it up loaded with Oysters.

Not a lot of space to work, but the office is nice…

seaweed wins…

Lunchtime in Clarinbridge brings usto @paddyburkes location where the Oyster festival originated some 70 years ago before moving to Galway.

Fear not, they do have another Festival to attend… @clarenbridgeoysterfest

Cozy in all of the corners…
@paddyburkes

A tasty Luncheon indeed @paddyburkes @kellyoysters

Hop on your bike for a quick ride back to Galway…

Thought I’d start into @komburamenbaogalway

…for one of their fabulous Oyster Bao
not to be confused with @cuanbeo

And when perusing the ancient stone walls - I noticed something… Oystery
