Ministry of Crab @ministryofcrab , Colombo

Set inside the beautifully restored Old Dutch Hospital in Colombo's Fort district, Ministry of Crab has become Sri Lanka's most internationally recognised address for seafood — and it's built almost entirely around one star ingredient: the wild-caught Sri Lankan lagoon (mud) crab.

Founded by Chef Dharshan Munidasa @dharshanmunidasa — alongside cricket legends Mahela Jayawardena and Kumar Sangakkara — the restaurant turns a single ingredient into a masterclass in Sri Lankan spice.

The genius of Dharshan’s cooking lies in restraint and respect for the ingredient. The signatures never miss:

Pepper Crab: Sri Lanka’s native black peppercorns, crushed whole on a traditional miris gala and cooked in rich crab stock. Pungent, warming, and deeply aromatic.

Garlic Chilli Crab: A nod to Dharshan’s dual Sri Lankan and Japanese heritage—Italian olive oil, fragrant garlic, spicy birds-eye chillies, and Japanese soy sauce emulsified into a sauce meant to be mopped up completely with thick slices of warm Kade bread. by @sidjalan

Some places stay with you long after you leave, and Smoke & Bitters @smoke.bitters in Hiriketiya is definitely one of them.

Created by best friends Don Ranasinghe @don_peachy & Lahiru "Lalla" Perera @lallaperera , this incredible restaurant and bar tucked away in the lush surroundings of Hiriketiya is everything I love about discovering a great food and drink destination — relaxed, unexpected, full of character and completely its own.

The food is all about fire, smoke and big Sri Lankan flavours, with an incredible depth and complexity to the dishes. And the cocktails are just as exciting — inventive, beautifully balanced and packed with local ingredients, spices, bitters and tropical flavours.
