Happy Holi! 💃🏽🤩

The festival of colours is all about joy and food. This year, being a little different, we have decided binge on home made delicacies, starting with Thandai which quintessentially represents Holi.

Recipe for home made Thandai mix:

1. 1/4th cup almonds
2. 1/4th cup cashews
3. 1/8th cup pistachios
4. 2 tbsp fennel seeds
5. 2 tbsp poppy seeds
6. 12-15 green cardamoms
7. 15-20 black peppercorns

Soak everything overnight. Next morning, remove the skin of almonds and pistachios. Blend in mixie with a little water. Strain the mixture, and reserve the liquid for thandai and refrigerate the residue.

Bring 1 L full fat milk to boil. Add edible rose petals, few strands of kesar, 5-6 tbps of sugar and thandai paste. Boil for 2-3 mins, and keep aside to cool. Once cool, refrigerate overnight to bring out the flavours.

Serve chilled next day. You many garnish using rose petals and blanched nuts.

It’s burger o’ clock! 🍔

This is definitely not the best video, but it was too good not to be shared. Homemade vegetable patty, fresh veggies and homemade sauce took it up a notch higher.

This is definitely making a comeback every week, because it was finger licking good.

If you’re running late in the morning, then these energy bites can be your saviour and will help satiate your hunger till lunch.

🖼: No Bake Energy Bites

Recipe for no bake energy bites:

1. 1 cup rolled oats
2. 1/2 cup peanut butter
3. 1/4 cup desiccated coconut
4. 1/4 cup chocolate chips
5. Handful of chopped walnuts (or any nuts of your liking - I personally prefer walnuts because of the crunch and texture)

Now assemble all the ingredients together in a bowl and mix till you get a consistency that is easy to roll into a ball. Peanut butter can be adjusted accordingly.

Trust me, you’ll fall in love with these energy bites!

Last night while browsing through old photos, I stumbled across my pictures with friends from graduation days. One such friend is Kriti, who would very lovingly bring Moong Dal ka halwa everytime she would come back to hostel from home. That halwa was enough to last us a few days/weeks. Although I detest the smell of ghee, but the smell of that halwa was captivating enough to make me forget the odour of ghee.

Kriti is now back home at Haryana, and I’m in Roorkee but I still wanted to make that halwa and remember those old days. So I hurriedly jumped out of my bed and soaked some moong daal. I woke up really early this morning to make the halwa as I was extremely impatient. However who am I kidding? Moong dal ka halwa is no joke. Even after adding cups and cups of ghee, I failed to replicate the taste and texture of the halwa made by Kriti’s mother. Kyunki maa to maa hai. Maa ke haath ka swad hi alag hai. So to salvage the mixture, I quickly rolled them up as ladoos, and relished them while browsing through old photos yet again.
