The final result!

This project was easier than I anticipated it being (aside from chasing our kids out of the room nonstop / that definitely slowed us down). We had to pick up some new tools in addition to the supplies we needed, but we’ll be able to use those for future projects.

This wainscoting really dressed up our plain, boring walls in such a subtle and sophisticated way. Next up will be picking up a few decorative items to really tie the room together. I plan to keep it simple although I’d really like to swap out the light fixture.

Now that I know we have it in us to do some of these projects ourselves I can’t wait to throw my next idea at my husband. We’ll see if he has as much faith in us as I do. by @sjswans

Homemade Knoephla Soup

5-6 med russet potatoes, cubed
4 carrots, chopped
4 celery stalks, chopped
1 medium yellow onion, diced
2 cans chicken broth
Homemade Knoephla (see below)
1 pint heavy cream
Salt and pepper to taste

Chop veggies. Boil potatoes in a pot of salted water while the veggies sauté (or steam) in a separate pan. Veggies are done when they are soft but firm (or whatever your preference is). Once potatoes are soft, remove some water until potatoes are just covered. Reserve water for later for additional liquid if soup is too thick. Add the chicken broth and sautéed veggies to the potatoes. Bring to a simmer. You can add a bay leaf or two if you’d like. While simmering, cut knoephla into pieces and add to the pot. You can add as you cut so they don’t stick together as much. Stir between each batch you add. Let soup simmer about 10 minutes and then add heavy cream. Let everything meld about 30 minutes on low heat, stirring occasionally.

Homemade Knoephla

2 c flour
1 - 1 1/2 c milk (slightly warmed)
1 egg
1 tsp baking powder
1 tsp salt

Mix dry ingredients. Add milk and egg and mix until it forms a ball without being really sticky. Add more flour if necessary. Cover with plastic wrap and let sit 30 minutes. Flour a working surface and roll out. Can be as thick or thin as you’d like but it will thicken as it cooks.
