‘Somethings not quite right about this’ Adam just said as he’s putting our mill back together. Thank god one of us is capable of completing such tasks. Hopefully we’ll start milling and pressing in the coming days. We’ve got a growing pile of fruit. Apple and Pear fruit. by @skyborrycider

Next Monday evening two brilliant producers will be joining us at 107 in Clapton for the evening.

In his second appearance at these premises (last time was 2018!) Joseph Jefferies of Les Bories Jefferies in Caux in the Herault, will be pouring a selection of his volcanic wines including his latest releases, some of the most exciting wines from the domaine, all open to taste and by the glass and bottle, along with a few exciting back vintages.

Also joining us is our good friend Dani Davies of Skyborry, who with his brother Adam, makes delicious cider and perry from heritage orchards around the Wye Valley & north Herefordshire. Dani will be previewing the latest releases from their tiny cider shed, which are some of our favourites so far.

The kitchen will be serving some hearty fare to go alongside, including braised sausage and lentils and a selection of delicious cheese.

Join us from 6.30pm. No reservations.

Thanks to @j4cks0on for the poster. taken in Lower Clapton by @skyborrycider

On Sunday the 13th of September we will be holding a sale of hand blown glasswares and bottles of Cider and Perry at @leilas_shop in Shoreditch, London from 12 mid day until 4pm. Our timing is impeccable as we swoop in during the London Design Week. Driving down from Powys with a boot full of breakables. We will be with Sacha who has been an assistant working with @baldwinguggisberg near Presteigne and will soon be moving back to France to open up a studio in the French alpes @1100glassstudio . So come and see us and have a glass of cider and maybe buy some things. Bottles of cider and perry, vases, drinking glasses and so on. by @skyborrycider

It feels like we hadn’t worked together for a while. Our lifestyles have changed a bit in the last year and schedules have not met up like they did in the glory days of the 2010’s. It’s felt a bit sad to not work together as much, or work on the cider much. People often ask how it’s going and if you haven’t been as devoted to it you start to feel like a phoney. So it was great to do a day today and figure out what’s what and bottle our last tank from last year. The main thing is , after a decent year for fruit in 2025, we took advantage and have managed to navigate several quality blends into bottle, so our stock levels are up. We are ready for harvest 26. Everything is quite parched around here after the driest July on record. Looking at that valley makes you want to use the ever so popular British phrase “It feels like we could be in France” . There’s a partial solar eclipse tomorrow at around 6pm get your goggles on. by @skyborrycider

I just read that the Great Oak of Sherwood Forest has died. One of the most famous of all the trees. When we were children we had the joy of being taken to Centre Parks of Sherwood Forest. We visited the tree and being tykes, we jumped the barrier and Adam squirreled away some acorns into his pocket and planted them in pots when we got back to Skyborry. That tree is a direct descendent of the Great Oak and it’s watching over our Orchard, planted just above our row of Perry Pears. Robin Hood eh? Stealing from the rich and giving to the poor?? There’s a dated idea. Rid the land of greedy toads!! by @skyborrycider

Light duties. The stars have aligned and we will be bottling what might possibly be the biggest batch of cider that small shed has ever seen. Potentially over 2000! Adam’s limping with a sprained ankle, Im nursing a bad back after ‘taking a tumble’ down the stairs three weeks ago. I’ve been trialling an experiment of the comparison between whingeing and paracetamol as active methods of pain relief. Inconclusive results however I’m aware that they do both help in some way. Both at the same time though, wow. We’ll be back, probably, But! Fermenting cider does not sympathise, the bottles are waiting, the caps are shining like bullion in their box and we think it’s time. The second photo is of the Kittens that Bronwen’s Cat had a few weeks ago. All heading off to their new homes soon. by @skyborrycider

The apples and pears ripen and fall generally between September and December, you can plan your year around this. The rest of the time everything is kind of up in the air. There’s a lot of maybes. Maybe we should bottle this now? Maybe we shouldn’t bottle it at all and blend it with that and wait a few more weeks? Oh lord. Life has changed and been busy for both of us in and around our other jobs and days in the cider shed together have been fewer and farther between. Not today though!! We were in each others hair all day, jostling pipes and racking tubes and bottles. All the fermentations have been a bit slower this time which is handy because there has been some neglect. By now we’d have bottled at least one of our ciders, but nothing yet. We had made a Kingston Black/strawberry Norman blend that I had ideas of it being our sweeter fruity bottled cider, it was tasting fine but lacking the complexity I was expecting, on the other hand our Breinton blend (foxwhelp/nehou/s redstreak) was coming very tannic, so we blended them together to hopefully balance them out. I think it’s worked. We plan to have single orchard ciders with a maximum of 3 ish (sometimes 4 ) varieties of apple, but the ultimate overriding goal is to have tasty ciders so we are reckless with our plans in our pursuit of this objective. When we blend them together like this we generally just label them as ‘Rural Method’. Our Tedstone Perry and Rural Method ciders are now with our distributor Wrights wines so should be available soon. We have a new Frederick Perry in bottle that we both agree is an absolute bloody treat. We are looking forward to sending that one out. Adam will be at the London Cider Salon this Saturday with it and the other bottles we are most excited about. Iechyd da pawb!! by @skyborrycider

Some of the Perry Pear trees in our Lower Jackets orchard are bursting into blossom. The oldfield tree in the second photo often shows well. I love oldfield, i think it’s a classy pear and have very fond memories of a batch we made in about 2011, the last time we had access to some. It makes Perry with a lovely silken texture. We made a little bit last year. Most of the Perry from 2025 harvest is bottled already but none of the cider, fermentations have been slow but steady, and within the next month or so we will hopefully have our 25s bottled. Our 2024s are being collected by @wrightswines this coming week so should be available from them shortly after that! by @skyborrycider
