New from Skyborry Cider & Perry. Adam and Dani make Cider, Perry and a bit of apple juice in a small shed nestled in the side of the Teme Valley a mile upstream from Knighton, Powys. The fruit is all hand harvested, from unsprayed orchards around the Wye Valley, often orchards previously used by Bulmers when they were making cider the old way. They have their own orchard, which is very young, which on a good year they bottles as it’s own cider. In terms of process - once the fruit is milled they let the pommace stand to macerate in open top containers for 24-48 hours before pressing, then the wild yeasts do the fermenting. They rack the cider off its lees throughout the winter months, slowing the fermentation down enough so that when it is bottled it ferments a little to condition the cider but stops leaving sugars present. No additions fining or filtering and if they are disgorged, it’s done by hand. Over the ten plus years they have learnt something new every year, through experimentation, trial and error and while always loving their work, the latest releases are some of the best we’ve tasted. We have: (notes by Dani) Rural method 24 Varieties Red foxwhelp, Brown Thorn, Harry Masters Jersey, White Beech, Ellis bitter, Kingston Black and Gris Dieppoise make up the blend. The fruit salad approach. Fruit from three different orchards in 2024. A full bodied and balanced Medium Dry Cider with a nice sparkle. Bottled in June 2025 and disgorged earlier this year. Tedstone 2024. A lovely bright vibrant sparkling Perry. Refreshing and fruity but certainly not lacking. Winnals Longdon and Brandy are the main varieties present. Medium dry and sparkling.

Simply a huge thank you from us, our cider makers, and everyone involved, to all the delightful people who came to the London Cider Salon on Bank Holiday Sunday; braving the high heat, to sample some truly beautiful bottles! It’s been mentioned a couple of times by folks who came, how high the standard of Cider, Perry & Spirits on offer was this year. It has been both surreal and wonderful to see the Salon grow and evolve in its 4th year, alongside the new makers who have emerged, but also the makers who now have a few years under their belts, but simply keep upping the bar. A huge thank you goes to Matheus, Georgia, Hector, Hamish, and the rest of the team at the @tate Modern, who are all always an absolute delight to work with. As well as a huge thank you to Sam and Luke and the @thenewtinsomerset for so kindly supporting this year’s salon. If you couldn’t make it this year, rest assured that the Salon will be back…
