Just entered my Oriental Pork and Broccoli Over Rice to the Food Waste Prevention Cooking challenge. Made with all leftovers, this was a very tasty meal!
Recipe:
1 1/2 pounds cooked pork roast in gravy
leftover broccoli
garlic powder
soy sauce
toasted sesame oil
Jar of gravy, if needed
4 servings of cooked rice
Mix the cooked pork, gravy, garlic powder, soy sauce, sesame oil, broccoli and extra gravy if needed in a large microwave safe bowl. Heat on 70% for 2-4 minutes or until heated through, stirring halfway through. Serve over rice.

My entry for the Ken's Dressings Kenbassador contest. Delicious chicken kabobs with chicken AND veggies marinated in a combination of 2 Ken's Dressings!! What a great dinner served with steamed rice!

Ken's Chicken and Veggie Kabobs
1 cup Ken’s Steakhouse House Italian (from a 16-ounce bottle)
½ cup Ken’s Simply Vinaigrette Classic Oil and Vinegar (from a 16-ounce bottle)
1 ½ pound boneless, skinless chicken breasts, trimmed and cut into bite size pieces
1 small zucchini, cut into bite size pieces
2 medium sweet onions, cut into wedges
½ pound white button mushrooms, cleaned
1 medium green or red bell pepper, cut into chunks
10-12 cherry tomatoes (optional)

Combine the Ken’s dressing in a bowl. Place chicken cubes in a zip top bag and pour 1 cup of the dressing mixture into the bag. Seal and “knead” to distribute the dressings so all chicken pieces are coated. Place in refrigerator for at least 2 hours to marinate.
In a separate zip-top bag, add all the chopped veggies and add the rest of the dressings. Close bag and “knead” to distribute dressings among veggies. Place in refrigerator for at least 2 hours.
Prepare indoor grill for grilling following manufacturers’ directions (or use your outdoor grill). While grill is heating, arrange chicken and veggies on skewers in desired order. Once grill is heated, arrange skewers on grill and grill for 4 minutes; flip and grill another 2-3 minutes or until chicken is fully cooked.
Serve with steamed rice. by @souxie1024

I just tried the easiest and most delicious recipe for biscuits. Aptly named BUTTERSWIM BISCUITS, they are just that! Swimming in butter! They're very easy to make....flaky...buttery and delicious!!! I'll be making these MANY times!!!

My favorite kabobs marinated in LaLechonera Mojo Criollo, homemade creamy drizzle made with mayo and Mojo AND homemade guacamole with a splash on Mojo!! Truly an all inclusive meal made with Mojo Magic! .... just happens to be Abuelita Approved!!!

I just got the rest of my prize for being the GP winner (best soup/salsa/chili) in the Hatch Chili Champs 2025 contest. What a wonderful selection of Melissa's hatch products....... I see lots of good cooking in my future!!!! Prizes received (not pictured here): Master Built Gravity Series 800 Grill and $1000.00!!).
