Our favorite kind of event!! Tickets for the next cooking class are online - Saturday is sold out 🥹 but for Friday the 23rd of October we still have some spots left:)

Together we will be making a 3 course menu featuring some of our seasonally changing signature dishes, plus we‘ll show you how to make your own water kefir at home - and you‘ll get your own culture to get started!! by @studioschmaus

had the pleasure of conceptualizing a dinner around a vegetable and absolutely loved it!!

all things @bimi_deutschland in Hamburg for 40 guests, including a bimi infused aperitif, a plating workshop for the starter (loved that part!!), a fall inspired main course and a dessert featuring the super green vegetable.

This event was a logistical challenge since we went all in with new plates, new glasses and new metal trays and had to bring everything to a new city - but luckily our team is on fire like never so it all went super smooth:)

Special thanks to our champs @cfrithiof , @alibabapowers & @kaaycoo for rocking this event with us and to @anna.renger for the support with the concept for the table styling!

Impressions of our summer dinner nights

At our studio in Kreuzberg

Amuse mise en place readyyyy

All set :)

Non alcoholic aperitif with cucumber

Me serving our amuse: cucumber bites filled with fresh & fermented sour cherries, crème fraiche & bread chip

The first course was a thai inspired sweet & sour fennel salad with lots of herbs (in the back)& crispy onions, served together with a chilled tomato water infused with shiso & thai basil

and a marinated tomato water infused:)

In love with the view!!

Next up was the bread course and we made our Buchteln of course

And served them with a cheese creme, different pickled onions and a onion chutney with elderflower

After that we made a pasta course

Fresh ravioli filled with goat cream cheese, chili & fermented garlic in honey, with fresh peas & fava beans, fresh coriander seeds and a foamy beurre blanc

So cozy <3

For the main we served a mushroom Bourgogne

with fermented apricots, a herb salad and a potato Kringel

aka cutest pommes dauphine ever

and for dessert we made a ice cream cup with pumpkinseed ice cream, roasted strawberry syrup, marinated strawberries, cream infused with (local!!) pandan & a freshly baked waffle

Anzeige - Hab mir dieses Jahr meinen größten Traum erfüllt und endlich unseren eigenen Garten gestartet!! Noch ist es dort ziemlich wild und es steht noch gaaaanz viel Arbeit an, aber wir sind jetzt schon richtig hyped hehe

Frag mich generell oft, warum ich so viel Zeit drinnen verbringe, deswegen freue ich mich umso mehr, dass wir jetzt auch im Garten Videos schneiden können!! Am besten geht das mit einem @snapdragonofficial X Plus Prozessor im Laptop, der sowohl Leistung als auch Akkulaufzeit krass steigert und mit dem man so auch ohne Strom im Garten arbeiten kann!! by @studioschmaus

Our boy Frithiof turned 25 🎂 and we thought we use the opportunity to tell him and everybody else how grateful and happy we are to have him in our team!!! I started my cooking career selling food in clubs, so coming back all these years later to cater a friend’s wedding for a group of people who used to run a club together (rip @menschmeierberlin ), high above Neukölln at @klunkerkranich , felt pretty special!!

We served some bites, a little bread station & a wedding cake

*fresh corn quiche with dyke cheese, sriracha, pickled jalapeño & muscat pumpkin
*green bell peppers filled with watermelon tartare
tomato tarte with smoked crème fraîche & herb salad
*deviled egg with mushrooms, fried onions & chives

*buchteln, seed bread & focaccia
*tomato & honey-fermented garlic butter
*mint & thai basil butter
*pickles

And the wedding cake was filled with local peaches, raspberry jam & cheesecake crème pâtissière by @studioschmaus

Anzeige - Rezept für glutenfreies Marmeladenbrot auf süß aka das gesündeste und leckerste Marmeladenbrot everrrr (Butter auch gesund in meiner Welt)

Macht von dem Saatenbrot am besten gleich eine größere Menge - ich hab das immer geschnitten im Tiefkühler und mach mir das im Toaster wieder knusprig, Traum!!

Ihr braucht:

- Zuckerreduzierten und fein passierten Fruchtaufstrich von @darbo_official - mit 80% Frucht und 1/3 weniger Zucker!
- Kalte Butter (wichtig, sonst lässt sie sich nicht schneiden)
- optional: Früchte & Kräuter zum Garnieren

Ich hab genommen: Himbeeren, Melonengurken, Zitronen und Lila Basilikum, Shiso, Ringelblumen

Rezept Saatenbrot:

100 g Sonnenblumenkerne
150 g Haferflocken
150 g Leinsamen
70 g Hanfsamen
5 EL Flohsamenschalen
1 TL Salz
20 g Zuckerrübensirup oder Honig
50 g Öl
370 g heißes Wasser

Zuerst die trockenen Zutaten mischen und dann die feuchten Zutaten hinzufügen und gut vermengen. Über Nacht ziehen lassen. Eine 25 cm große Kastenform mit Backpapier auslegen, die Masse dort gleichmäßig verteilen, fest reindrücken und in einem vorgeheizten Ofen bei 180 Grad für 30 Minuten backen. Aus der Form herausnehmen und umgedreht weitere 20-40 Minuten goldbraun und knusprig backen. by @studioschmaus

Vongole mit Chili & Petersilie

‘Everyhting roasted Pasta’ - geröstete Paprikasoße mit gerösteten Mandel und geröstetem Knoblauch & geröstete Kirschtomaten

Gegrillter Wolfsbarsch & gegrillte Scampi

Kartoffelsalat mit Basilikum Mayo, grünen Bohnen & in der Glut gegarten Zwiebeln

Obst auf Eis by @studioschmaus
