Somewhere in Paris, a Frenchman just dropped his cigarette. “MON DIEU! WHAT HAVE YOU DONE TO MY CROISSANT?!”

Well, sir, let us explain.

Our longtime pal @chef_ej_miller of @chardonhouston is joining us for Saturday Morning Specials and apparently neither of us knows when to leave a perfectly good French classic alone.

Steak Frites Croissant with Au Poivre Sauce — steak, fries and peppercorn sauce stuffed into a croissant. We regret nothing.

Croque Madame Danish — because a croque madame wasn’t buttery enough already. We fixed that.

Beef Bourguignon Kolache — a French classic meets a Texas classic. Neither country was consulted.

Apple Calvados Kouign Amann — buttery, caramelized apple goodness with a little French apple brandy. Finally, something the French might actually approve of.

Saturday Morning Specials. 10am until we sell out. EJ, this friendship has officially become an international incident.

Saturday at Discovery Green tasted like this. 🔥 (part 1)

Nearly a hundred chefs, one lawn, four hours of the best eating in Houston - all of it backing food and beverage workers in crisis.

Skewers over open flame. A scallop still in its shell. Sandwiches built like they mean it. And the people - laughing, feeding each other, showing up for their own.

This is why I shoot food. Not the plates. The people behind them.

Today was one of those days that fills your cup all the way up. ❤️

First, the Fluff team absolutely crushed it at Southern Smoke Festival today. I’m so incredibly proud of this crew and grateful that they show up—for me, for each other and for this community. They worked their asses off today and I wouldn’t want to do this with anyone else.

And then there’s @southernsmokefoundation

Today, this incredible community raised $2 MILLION to help people in the food & beverage industry when they need it most. Two. Million. Dollars. Let that sink in.

That doesn’t happen without every chef who cooked, every bartender who poured, every wine shop that showed up, every volunteer who worked behind the scenes and most importantly, every single guest who bought a ticket, ate, drank and supported this mission.

This industry takes care of people for a living. Southern Smoke makes sure someone is there to take care of us, too.

What a day. What a community. My feet hurt. My heart is full. ❤️

Austin, I’m coming for you. 🔥

I’ll be back at @hotluckfest this year, cooking at Giddy Up! on Friday, October 16 with Aaron Franklin and a whole bunch of the homies.

If you’ve never been to Hot Luck, imagine the best high school kegger ever… except everyone grew up, learned how to cook really tasty food and brought better booze. That’s pretty much it.

It is hands down one of my favorite weekends of the year.

Come hungry. Come thirsty. Come say hi. I’ll be the one making something with an irresponsible amount of dairy. Obviously.

Our friends at @13celsius are celebrating two decades of pouring very good wine and being one of Houston’s favorite places to drink it, so naturally we invited them over to celebrate with butter.

@adeledrinkswine Chef Joe & Elyse will be in the kitchen baking it up with us Saturday. There may also be wine. We cannot confirm or deny anything. 🍷🥐

🧀 Baked Brie Croissant — baked brie with all the accoutrements. Yes, *all* of them.

🍎 Chicken & Apple Sausage Kolache — blackberry whole-grain mustard & cornichon. A very fancy little sausage situation.

🇪🇸 España Quiche — Spanish chorizo, manchego, tomato & basil. Quiche went on vacation and came back hotter.

🍷 Drunken Cannoli Pain au Raisin — Marsala-soaked sultanas & sweet ricotta cream. The raisins have been drinking. We support their choices.

During COVID, I watched the IRC show up in a big way for our industry—fighting for us, speaking up, and actually getting things done when so many of us were just trying to keep the lights on. It didn’t feel performative, it felt real.

Apparently one BBQ joint wasn’t enough. Or two. So we called three of our favorite smoky-meat-making friends and made some questionable pastry decisions. 🔥

BBQ EXTRAVAGANZA is back.

🔥 @fegesbbq Brisket, Egg & Pimento Cheese Biscuit — brisket + egg + pimento cheese on a Fluff biscuit. Breakfast understood the assignment.

🔥 @burntbeanco Chopped Beef & Cheddar Quiche — chopped beef, cheddar and buttery pie crust. Because BBQ absolutely belongs in a quiche and we will not be taking questions.

🔥 @truth_bbq Smoked Turkey Jalapeño Popper Croissant — smoked turkey, jalapeño cream cheese, sharp cheddar & crispy bacon wrapped in laminated butter. Restraint was never part of the plan.

🍒 Cherry Pop Tart — because after all that meat, cheese and butter, we thought you deserved a fruit.

This Saturday is for Dolly. ❤️

We lost a true original this week. A woman with an enormous talent, an even bigger heart, plenty of sparkle and a very well-documented love of potatoes and good Southern food. So we’re paying tribute the way we know how with butter, carbs and a little Fluff nonsense.

🥔 Loaded Baked Potato Gratin Croissant — because if Dolly loved potatoes, we were obviously going to put them inside a croissant.

🐷 Roast Pork & Collard Greens Quiche — Southern comfort food got itself a buttery crust.

🧀 Pimento Cheese & Ham Biscuits — salty, cheesy, hammy and not remotely interested in being dainty.

🍌 Classic Banana Pudding — No tricks. No reinvention. Some things are already perfect.

Saturday Morning Specials. 10am until we sell out.

A little comfort food for a woman who gave the world an awful lot of joy.
