GOOD MORNING, VIETNAM! (In my best Robin Williams voice)

This Saturday, we’re welcoming Chef @its_tam_to_cook & @roo_deng from @moonrabbithtx into the Fluff kitchen for a Vietnamese-inspired Saturday Morning Specials menu!

Vietnamese classics meet French pastry. And you know we’re not leaving well enough alone.

Rau Muống Xào Tỏi Quiche — garlicky stir-fried water spinach with vegetarian oyster sauce, baked into our buttery quiche crust. Think savory, garlicky greens with a little umami magic.

Pâté Chaud Pop Tart — a Vietnamese-inspired savory pastry filled with seasoned pork. We gave it the Pop-Tart treatment because apparently puff pastry wasn’t chaotic enough.

Bò Né Croissant — inspired by Vietnamese sizzling steak and eggs, loaded with steak, eggs, pâté, bánh mì mayo & tomatoes. Basically, an entire Vietnamese breakfast moved into a croissant. We support this decision.

Vietnamese Coffee Cinnamon Bun — bold Vietnamese coffee flavors meet a buttery cinnamon bun made with our croissant trimmings. Waste not. Regret nothing.

Saturday at 10 AM until we sell out! Limited quantities, as always. Vietnam brought the flavors. France brought the butter. Tam and Rudy brought the magic.

Somewhere in Paris, a Frenchman just dropped his cigarette. “MON DIEU! WHAT HAVE YOU DONE TO MY CROISSANT?!”

Well, sir, let us explain.

Our longtime pal @chef_ej_miller of @chardonhouston is joining us for Saturday Morning Specials and apparently neither of us knows when to leave a perfectly good French classic alone.

Steak Frites Croissant with Au Poivre Sauce — steak, fries and peppercorn sauce stuffed into a croissant. We regret nothing.

Croque Madame Danish — because a croque madame wasn’t buttery enough already. We fixed that.

Beef Bourguignon Kolache — a French classic meets a Texas classic. Neither country was consulted.

Apple Calvados Kouign Amann — buttery, caramelized apple goodness with a little French apple brandy. Finally, something the French might actually approve of.

Saturday Morning Specials. 10am until we sell out. EJ, this friendship has officially become an international incident.

Saturday at Discovery Green tasted like this. 🔥 (part 1)

Nearly a hundred chefs, one lawn, four hours of the best eating in Houston - all of it backing food and beverage workers in crisis.

Skewers over open flame. A scallop still in its shell. Sandwiches built like they mean it. And the people - laughing, feeding each other, showing up for their own.

This is why I shoot food. Not the plates. The people behind them.

Seeing that two took my breath away.

I’ve been privileged to be at @southernsmokefoundation festival for four years. Cooked for it as @tuktuksnackshop for the past three. There is a moment that I wait for every year now - when this check is revealed for what we’ve all raised for one day for our fellow service industry comrades. It’s always a big hit to the chest realizing the role we get to play in this moment — a combination of absolute pride and shock.

The team at Southern Smoke has become an extended family of sorts - showing up huge for Kentucky and me in a lot of ways. In the coming weeks we will have some exciting things to share for my local folks, but more importantly, they’ve creafed a strong net to help catch all of us when we are in need.

The recent years have been hard on a lot of us in the industry. Grateful for the folks who have a vision to make it, and keep it, better. Thank you to all of you for showing up huge. The differences you make are palpable, and I am grateful for all of it. Moreover, the weekend absolutely embraces the core of hospitality - in showing up for one another through the intangibles. From year to year our bonds strengthen - and my chosen family grows.

Two million dollars for mental health and emergency relief in one day. A toe in created an incredible wave. Thank you, team Southern Smoke, and all the chefs and logistical wizards that made yesterday happen. I can’t wait to see what’s ahead.
