Lots going on here. I had fun last night trying to cross the boxes of shellfish, spice and meat lol.

Mango Aguachile with prawns from @sunhfish red peaches from @froghollowfarm pickled red onion, avocado, chili garlic crunch and some crispy shallot

Gochujang Buttermilk marinated Chicken Wings with a sweet and spicy gochujang based sauce

Linguini with (Manila) clams from @sunhfish

Red Wine Brased Short Rib and mashed potato (in the most French way possible with as much butter and cream as I could fold in and still taste potato 😂)

A few weeks ago I served a dish by @ottolenghi that featured a citrus-fish sauce caramel with clementines and blackened chicken, tonight I’m using that same sauce (spiked with ginger and chiles) along with blackened Alaskan halibut from @sunhfish roasted cauliflower purée and crispy potatoes. There’s a lot going on here but it was a great plate.

Pretty happy with the way these three courses turned out. I cook a lot and don’t post a lot so just know that there’s always content being produced I just don’t always feel like sharing it. I got to stretch my wings a little bit last night and I think that’s a good thing ☺️
(All seafood from @sunhfish who consistently demonstrate just how much better their product is than anywhere else)

Pan Seared Scallop: citrus aquachile (grapefruit, navel orange, lime, lemon), avocado, nectarine

Bluefin Tuna Wonton: black garlic-Meyer lemon aioli, green garlic, green onion, crispy rice and chili garlic crunch

Crispy Skin Duck Breast (from @maryschicken and @taylorsmarket ) with sweet potato puree, onion rings and creamy Szechuan peppercorn-mustard sauce
