We held our third annual cheff’s table this past weekend with the theme this year being “aquatic”. The home cooked tasting menu took our guests sailing around the world, each stop sharing a different country’s maritime tale and bounties from their seas.

Kon-Tiki - ceviche sundae with leche de tigre sorbet and fish sauce caramel. Mixing the lime-based ceviche with the sorbet turns it into a coconut-based poisson.

Marie Celeste - butter seared scallop seated on a slice of apple in a bulhão pato inspired broth, made from mussel juice and cilantro oil.

Yuryeongseon - Theragun-massaged octopus lightly poached and fried, served with an octopus-infused gochujang aioli and tarragon.

Sanzu River Boat - ochazuke with miso marinated salmon, yuzu dashi broth, and crispy rice. Garnished with salmon skin, garlic confit, garlic chips, and yuzu zest.

La Méduse - omelette with milk poached cod, served atop a bed of flame-torched bechamel and orzo.

HDMS Havfrue - taiyaki filled with blueberry compote swimming in a sea of spirulina and sea salt ice cream, garnished with seaweed bacon and blueberries.

So proud of our team for the level of execution we pulled off — it really didn’t feel like it was our first weekend all working together and I could feel the heart and soul everyone poured into it <3

@jonjon.ig and I cooked up a tasting menu for some friends yesterday. We spent two nights making spreadsheets to plan it out, two nights to test dishes, and one day for prep + dry run.

The concept is dishes we made in our 20s but elevated / made healthy for our 30s. Every dish had a twist that taught you how to cook a bit healthier. Menu at the end includes the macros. Didn’t quite hit our protein goals but still proud of what we executed!

Huge shoutout to our kombucha-lier @constance.chung who made our pairings from scratch, all the friends that helped us taste test and prep, and all the friends that came for the final experience!!

🦆 four ways: on pea/mint and cauliflower purée (inspired by @rustiek_tavernegastronomique), as a katsu curry (from shokugeki), in orange sauce, with ume wasabi paste

The ume wasabi started out as my least favorite but grew on me over time and became my favorite by the end. Very interesting flavor combination, would recommend giving it a try!

Cooking has been keeping me sane during the pandemic. Learned a lot of delicious foods in the process!

Prime rib is a great one for impressing and feeding a large group with little effort, or in our case feeding a small group for many days. The effort doesn’t change when you feed more people, just buy a larger piece! Active cook time is < 10 min — simply cover with salt and pepper, then throw it in the oven.

But for best results spread that out over three days. After salting, leave in fridge for two days. Then cook on lowest possible oven temp for ~6 hours (depends on your oven, you want it to reach internal temp of 125F) and finally blast on highest oven temp for 5 min.

Potato pavé (on the side) is a dish developed by Thomas Keller that is much more labor intensive, but brings potatoes to their pinnacle. Creamy and flavorful layered interior, crispy stackable exterior.

Enough of New Zealand for now. Here's one from Vietnam. I wanted to come here since I was under the impression this epic bridge was built long ago for religious reasons. But nope, twas built just two years ago specifically for tourists. Still epic though. .

Pouakai Circuit, one of our favorite multi day hikes in New Zealand.
There’s this pond that everyone takes a mirror shot over but really it’s like a puddle. Flying the drone over it makes it look more impressive than it really is.

I'm starting to write a van life cook book! The premise is food that's healthy, cheap, AND flavorful, all done using just one pot or pan. Inspired by van life, but could be useful for anyone looking to get started with cooking that doesn't have a ton of equipment or time, and doesn't like following recipes. This book is meant to be instructional in principles of cooking, recipes act as guides for ratios and ideas. DM me if you'd be interested in it, looking to bounce ideas off of people. by @supernuber
