Norway came to Mumbai this week, and it arrived by air, impeccably fresh! Ahead of the first anniversary of India-Norway Free Trade Agreement, @11enses partnered with The Norwegian Seafood Council (@seafoodfromnorway_global) and The Royal Norwegian Consulate General, Mumbai (@norwayinmumbai) to introduce @norway’s celebrated seafood among Mumbai diners. Who better to interpret it than @chefsarfaraz_ahmed of @tresindmum, one of the country’s finest chefs? His degustation, built around King Crab, Cod, Scallops and cold water shrimps flown in from Norway, was a thoughtful study in how gracefully Indian flavours work for Norwegian seafood. Chefs, business leaders, travel voices, importers, exporters, hospitality professionals and journalists shared a room where talk of supply chains gave way to the flavours on the plate and where to find them in India. Behind every plate lies a chain of people, from fjord to table, and it is rare to find them all in one room. Here’s to more of Norway on Indian tables. Skål 🥂 #norway #seafood #events

When did we start eating with our cameras before our forks? Happy to have shared my perspective in this week’s @deccanchronicle_official Spotlight feature by @rc_roseinacoutinho, “Meals on Reels,” exploring how social media is reshaping the way we dine—and why aesthetics should never come at the expense of flavour, craftsmanship, or the overall dining experience. As I mention in the story and which we strongly believe at @11enses : “Ingredients and craftsmanship should never be compromised purely for the sake of photography or social media appeal.” It’s a conversation that goes beyond food photography—touching on hospitality, design, etiquette, and the culture we’ve created around dining today. Read the complete feature through the link in bio. #DeccanChronicle #MealsOnReels #FoodJournalism #Hospitality

Top Beverages | Jan 2026 Traveled to a region I’ve never been and discovered some ace beverages, back to the bay and then some… Local Spirits — @shadskyeshillong, Meghalaya Bichi & Taid Krai — two local spirits, potent and versatile, wondering if I enjoyed this more straight or in the numerous cocktails? Chocolate Old Fashioned — @30bestbarsin, Goa It’s fine to not mess with classics and just elevate them to the T — at the 30 best awards @divyanshu_b2b showed me around Usual Cafe — @cococartandcafe, Airport This has become a staple cafe given I spend more time in this building than I do out on mumbai streets, a wide smile sometimes helps @cherrapunji.craft.gin.sg Gin — Meghalaya A unique copper bottle, even more unique botanicals — the cherry blossom is wild for this locally made gin. Elevated Classics — @11enses, Mumbai We leave no stone unturned when it comes to themes and working on our menus, after all; that’s all we do. Truffle’ing — @laloca_maria, Mumbai so @chefmanuelolveira makes the food, but hidden talent in @mickeerocks and her team at this comfort restaurant involved some banging themed cocktails Experimental Creations — @shadskyeshillong, Shillong This shows up again in this list but honestly from straight up classics to these incredible creations Sagar and his team truly know what they up to. @dietcoke_india Zero— 30,000ft in the air I prefer this over Diet Coke under pressure. You ? Tea Tasting — @rikynjairesort, Meghalaya We tasted some serious teas straight from the slopes of north east’s beautiful hills at this luxurious stay. A truthfully excellent afternoon. Negroni — @nonnamei.in, Shillong How can you not have Negronis at an Italian restaurant? That too high up north… but here, you’ll find many reiterations #foodwriter #beverages #expert #top10

A classic, allowed to wander. Saat Samundar journeys the Maharaja Line at The Silver Bar; Indian accents, tropical notes, with the woodyness of almond, a hint of citrus, and a roasted coconut finish that lingers.
