NABI x 7TH DOOR.

On October 13, Chef Kim Dae Chun (@dankim79) of 7TH DOOR HANGZHOU (@hangzhou7th, @7thdoor_official) and Chef Tom Ryu (@ryu_cook) of NABI (@nabi_shanghai) came together for a collaborative dinner.

Grounded in fermentation and aging, the foundations of Korean cuisine, two Korean restaurants from Shanghai and Hangzhou brought flavors shaped by time and their own sensibilities to a single table.

We extend our sincere thanks to the 7th Door team and to all our guests who joined us for this special evening. NABI will continue to deepen its understanding of Korean cuisine through meaningful encounters.

《7th Door》

What happens when Cantonese mastery meets contemporary Korean innovation?

For just two nights, @cheftamkwokfung (Chef Tam’s Seasons at Wynn Palace) joined forces with Chef Shin Chang-ho (@joo.ok_nyc ) and @dankim79 ( @7thdoor_official ) for an epic six-hands collaboration celebrating the ultimate aquatic treasures: sturgeon and caviar! 🌊🥢

Here are a few highlights from this unforgettable head-to-tail tasting menu:
🥟 Sturgeon Gyoza (Chef Tam’s Seasons)
Crispy on the outside, insanely tender on the inside! Chef Tam takes Cantonese dace fish ball traditions and crafts a pan-fried dumpling packed with sturgeon meat and bones, seasoned with white pepper, sesame oil, and salt to let the natural fish sweetness shine.

🍡 Abalone Japchae Corn-dog with XO Sauce (7th Door)
Street food, but make it ultra-luxurious 🤤 Inspired by classic Korean corn dogs, this crispy bite is filled with 3-hour gently steamed abalone and savory japchae, then paired with rich Cantonese XO sauce for the ultimate cross-cultural crunch!

🥣 Sturgeon Marrow Stewed in Roast Goose Tom Yum Sauce (Chef Tam’s Seasons)
Slow-braised, melt-in-your-mouth sturgeon marrow infusing a vibrant Tom Yum base made with young coconut water, lemongrass, roasted shallots, seasonal Yunnan wild mushrooms, and rich roasted goose. Pure umami perfection.

🍡 Songpyeon-Inspired Rice Cake with Fig Variation (Joo Ok)
Korean tradition meets Chinese ice-cream mochi style! Featuring chewy songpyeon paired with seasonal figs, pears, mascarpone, and a crunchy Macau-style sesame candy. The ultimate refreshing, elevated sweet treat 🍐✨

Massive thanks to all three chefs for an absolute collaboration! 👏🥢

49 Asia’s 50 Best Restaurants 2026

เริ่มด้วย Tuna Hoe Muchim, Sturgeon Gyoza และ Abalone Japchae Corn dog with XO Sauce แพริ่งกับ Tsingtao 7 Day Fresh Original Beer 🍺

หนึ่งในจานที่พอลลีนประทับใจมาก Joo Ok’s Signature Perilla Aromatic Razor Clam, Lobster and Caviar กลิ่น perilla หอมชัด มี razor clam, Ise ebi, caviar และ marinated quail egg แพริ่งกับ Beluga Noble Vodka 3L ลงตัวมาก👏
