I’m almost ready to show this week very special @masterchefonfox but first we got a very special compare and contrast with a very special pop-up restaurant vibe

For this season version of the wall, there will be two chefs doing the advantage. The last few seasons there were different types of advantages with picking the team.

As you could see last night was a very special challenge. It was the return of the wall. And just some of the dishes from the previous seasons featured during the wall.

Before I show you the dishes that the chefs are gonna be making in the current challenge, I had a quick little throwback to two years ago, with another special guest, season 13 winner, @grant_gillon

HIGHLIGHTS FROM LAST WEEK.

We sold a ton of our Chef's Tasting Menu last week along with some new menu items so I'd like to share some of these dishes. Descriptors in slide order.

Caciofi alla Giudia. A classic dish originating from the ghetto of the Roman - Jewish community. Fried artichoke, parmesan, shaved French bottarga, smoked salmon caviar, & charred lemon with a green garlic aioli.

Chitarra alla Carbonara. Square shaped spaghetti noodle made from the "chitarra" (guitar) shaped tool used to cut the sheet of pasta dough. Guanciale, onion, garlic, foamed truffled hollandaise, parmesan, a Happy egg yolk, & shaved black truffles.

Australian Wagyu Picanha - 9. Grilled asparagus, huacatay gnocchi, radicchio, fried sweet onion ring, with sauce au poivre. We blasted through the Wagyu so next we came to...

Elysian Fields Lamb Chop, raised using the "Safe Alternative® Method" and known for their clean flavor and quality. Cooked on our Japanese Binchotan charcoal grill we used a similar set as the Wagyu, adding crispy black trumpets accompanied with that chop bone for some quality gnawing action.

What happened to the rest of the Wagyu you ask? Australian Wagyu Tartare. Green garlic dijonnaise, chips, and smoked salmon roe.

Chitarra alle Vongule. Chopped clams, a pan sauce made with smoked bacon, garlic, celery, onions, and white wine & olive oil. Topped with a sprinkle of bread crumbs and a dollop of our XO sauce in each of the shells.

Adam's Focaccia. This constantly sells out. Crispy sage, lemon zest, and lavender honey. Served with a side of our brown butter.

Garganelli with Riverview Farms Pork Genovese. Sugar snaps, and young pecorino.

Come to Boccalupo. You won't be disappointed. Especially when I'm on aux. 😁
