I still can’t believe the world’s first Michelin-starred Cuban restaurant is right here in West Palm Beach, Florida. ⭐

Emelina is an intimate 16-seat restaurant created by chefs Osmel Gonzalez and Camila Salazar, bringing modern Cuban cuisine to a completely different level.

We went for my birthday and it was honestly such a special experience — beautiful food, incredible attention to detail, and watching the dishes being prepared right in front of us made it even better.

If you’re looking for Michelin-starred restaurants in West Palm Beach, fine dining in South Florida, or somewhere really special for dinner, put Emelina on your list. ❤️

You may wonder how a cuisine as seemingly simple as Cuban food finds its way into the Michelin Guide. The answer is pretty simple: put @__osmel__ and @camila.salazar.gomez together with @alvaro_perez_miranda

We’ve been working with Chef Osmel for many years now, since he returned to Miami after working at one of the best restaurants in the country in California. His love and respect for ingredients is something I rarely see. Not unheard of, but Osmel definitely takes it to another level.

His orders aren’t the easiest to put together. He makes us work. And I love that.

I can’t help but feel proud when we can put a box like this together for him week after week. Every single thing in here grown on our humble little farm, on land that just three years ago was nothing but dirt.

Here’s to fine Cuban cuisine with a South Florida flair.

🌴 The 2026 MICHELIN Guide Florida reveal may have happened digitally, but in The Palm Beaches, the celebration deserved a moment of its own. ⭐️

I joined the chefs and restaurant teams behind Palm Beach County’s 10 MICHELIN-recognized restaurants as they gathered to finally receive their plaques in person.

But this evening was about more than plaques. It was about the people behind them, the growing culinary identity of The Palm Beaches, and the very real impact these restaurants have on the destination.

Who earned a Star? Who landed a Bib? And which restaurants make up the full 2026 MICHELIN-recognized Palm Beach County lineup?

I’m sharing the celebration, the complete list, and why this particular gathering felt especially meaningful on The Whet Palette.

For years, I tried to convince every chef we worked with to use okra during the summer. It grows beautifully here when almost everything else struggles, so to me it just made sense.

After five summers of growing it, I see okra a little differently.

I keep growing it not because I think every chef should use it, but because it’s a legacy crop of the South. Brought from Africa centuries ago, okra became deeply woven into the agricultural and culinary history of the American South. A crop with history, knowledge and tradition attached to it.

And I do love a portion of roasted, crispy okra. Kudos to the chefs who choose to honor the crops that deserve recognition.

Two of Miami and West Palm Beach’s most decorated chefs are joining forces for the first time. Niwa, a first-of-its-kind concept from APM Restaurant Group, is opening this October in the Flamingo Park District.

Niwa brings together Osaka-born sushi chef Masayuki Komatsu of Ogawa, now in its third year holding a star, with Cuban-born chef Osmel González of Emelina, the first Cuban restaurant in history to earn one, folding Latin flavor into Edomae technique with fish flown in directly from Tokyo’s Toyosu Market.

The 20-seat space runs a walnut and celadon-green palette will also have an outdoor tea garden, a genuine rarity in South Florida dining, running a tea program developed with Miami tea specialist JoJo Tea.
