Pastel de chocolate con higos y almendras

Ingredientes para el bizcocho

- 180 g de harina
- 8 g de levadura
- 55 g de cacao en polvo
- ¼ de cucharadita de sal.
- 57 g de mantequilla sin sal a temperatura ambiente
- 60 ml de aceite de oliva
- 250 g de azúcar blanco.
- 2 huevos grandes
- 157 ml de leche, a temperatura ambiente.
- 4 higos
- Almendras laminadas

Ingredientes para la ganache de chocolate:

- 115 g de chocolate 75% de cacao
- 115 g de crema de leche

Elaboración:

1. Precalienta el horno a 180 °C.
2. En un bol grande mezclaremos la harina, la levadura química, el cacao en polvo, y la sal.
3. Con una batidora eléctrica batiremos la mantequilla y el aceite a velocidad media hasta obtener una mezcla suave y bien integrada, unos 3–4 minutos.
4. Cuando esté completamente incorporado, añadiremos el azúcar.
5. Añadiremos los huevos batiendo a velocidad baja.
6. Incorporaremos los ingredientes secos a los húmedos a mano, alternándolos con la leche.
7. Verteremos la mitad de la masa de chocolate en el molde preparado con aceite y papel de horno.
8. Horneamos a 180 °C durante 50–60 minutos.
9. Dejaremos enfriar el bizcocho dentro del molde, sobre una rejilla, durante 15 minutos antes de echar la ganache.
10. Para la ganache, troceamos el chocolate en un bol y echaremos encima la crema de leche calentada.
11. Dejaremos reposar durante 3’ y removeremos para obtener una textura densa.
12. Si queda muy líquida, la dejaremos reposar en la nevera durante 10’.
13. Extendemos la ganache sobre el pastel y decoramos con los higos cortados y las almendras laminadas.

After the little adventure of our yellow bench last summer, when it was “stolen” by a neighbour and later returned, it somehow became a famous bench in the neighbourhood.

So we decided to give it a new purpose. In this series, we invite some of the wonderful people and small businesses we work with at Café Conrad to take a seat and share their story — from neighbours, for neighbours.

This time, we’re introducing Anna from @_eatsabouteating, who makes all the homemade cakes for Café Conrad.

1. Why did you decide to start your business?

Coming from a rich culinary country, Anna has always loved ingredients, recipes, and discovering new food. What started 8 years ago as an Instagram page slowly grew into something bigger.

During Covid, she began cooking more, creating recipes, and sharing them online. The response was so positive that friends kept asking her to cook for them. About a year ago, she took the next step and started offering private cheffing, cakes, and cooking services.

That is where Eatsabouteating and Café Conrad met. Together, we decided to sweeten up the café with homemade cakes alongside our coffee.

Coming from a marketing and corporate background, the change was hard, but became the best decision she ever made.

2. What do you stand for, and what are your favourite products?

Anna stands for authenticity and seasonal cooking. She loves fresh ingredients, so the cakes at Café Conrad change regularly.

For her, cooking is about creating happiness. After hours in the kitchen, the biggest reward is seeing people smile and knowing food can create cherished moments.

Her favourites are butter for anything sweet, and garlic for savoury dishes because you can’t go wrong with garlic.

3. Who are you grateful for in life?

Anna is grateful for her parents. Their work in the food industry opened her eyes to this world.

She is also grateful for their support while starting her own business and changing careers. Moving from a solid job into something uncertain is never easy, but as they always told her: follow your passion, and nothing can go wrong.

Fresas con cobertura de chocolate negro y blanco 🍓🍫

Ingredientes:
- Un puñado de fresas.
- 2 tabletas de chocolate negro Blanxart (+82% cacao)
- 1 tableta de chocolate blanco Blanxart.

Elaboración:
- Empezaremos fundiendo ambos chocolates al baño María, por separado.
- Con el chocolate negro una vez ya fundido bañaremos las fresas y las pondremos a reposar en la nevera sobre un papel de horno, aproximadamente 15’.
- Con el chocolate blanco, lo pondremos dentro de una manga pastelera, y cortaremos un pequeño corte en la punta de la manga para que las líneas de chocolate blanco queden finas.
- Cuando dibujemos las líneas trazaremos como más nos guste.
- Las volveremos a llevar a la nevera por 15’ para que ambos chocolates se solidifiquen.

Twee dagen vol creativiteit, inspiratie en vakmanschap met Johnny Othone en Madeleine Murphy van Allilon in ons Davines House in Deventer ✂️✨ Van cutting en colouring tot styling, tijdens deze training deelden zij hun visie, technieken en creatieve proces.

Op de tweede dag gingen cursisten zelf aan de slag om de technieken en kennis direct toe te passen, onder begeleiding van Johnny en Madeline. Naast alle inspiratie genoten we samen van een bijzonder diner met onze private chef Anna en heerlijk Italiaans eten, in een setting die perfect aansloot bij de sfeer van deze dagen.🍝🌿

Who needs a coffee date when you’ve got a date coffee? ☕️

Ingredients:
4 Medjool dates
100 ml vegan cream
120 ml oat barista milk
1 cup coffee
Ice cubes

Method:
Brew the coffee.
Remove the pits from the dates and blend them with the vegan cream and oat milk until completely smooth and foamy.
Fill a glass with ice cubes, pour in the coffee, and top it with the date cream mixture.

Fours para el Día de la Madre💗🍫 Toma nota de esta receta riquísima🫰🏻

Ingredientes para la base:
- 115 g de chocolate 72% ecológico Blanxart
- 165 g de mantequilla sin sal
- 150 g de azúcar
- 100 g de azúcar moreno
- 3 huevos grandes
- 1½ cucharaditas de extracto de vainilla
- 140 g de harina de trigo
- 65 g de cacao en polvo
- ¾ cucharadita de sal

Ingredientes para la cobertura rosa:
- 57 g de mantequilla con sal, a temperatura ambiente
- 125 g de azúcar glas
- 20 ml de nata para montar (más si es necesario)
- 10 gotas de colorante rojo o rosa

Ingredientes para la cobertura de chocolate:
- 57 g de mantequilla con sal, a temperatura ambiente
- 125 g de azúcar glass
- 20 ml de nata para montar (más si es necesario)
- 2 cucharadas de cacao en polvo

Ingredientes para la cobertura extra de chocolate:
- 75 g de chocolate 72% ecológico Blanxart

Pasos:
1. Derrite el chocolate con la mantequilla y mezcla con ambos azúcares.
2. Añade huevos y vainilla, e incorpora los ingredientes secos con espátula.
3. Vierte en molde engrasado y hornea a 180ºC durante 30 min.
4. Prepara las coberturas batiendo todos los ingredientes hasta integrar.
5. Añade colorante a la cobertura rosa y cacao a la de chocolate.
6. Deja enfriar la base, corta círculos y pártelos por la mitad.
7. Rellena con las coberturas usando manga pastelera.
8. Derrite el chocolate extra y cubre los fours.
9. Refrigera 30 min hasta que solidifique y decora al gusto.

Cor de xocolata de Sant Jordi 🌹📖

Ingredients per al pastís de xocolata:
• 125 g de xocolata negra 77% Perú
• 100 g de mantega amb sal (o mantega sense sal + 1/4 culleradeta de sal)
• 275 g de sucre blanc (millor extrafí)
• 65 ml d’oli (vegetal o de colza)
• 1 culleradeta d’extracte de vainilla
• 2 ous a temperatura ambient
• 17 g de cacau en pols
• 150 g de farina de blat (de tot ús)
• 1 culleradeta de llevat químic (pols de coure)
• 250 ml d’aigua bullent

Ingredients per a la cobertura vermella:
• 250 g de mantega sense sal a temperatura ambient
• 400 g de sucre llustre
• 1 culleradeta d’extracte de vainilla
• 1 culleradeta i mitja de llet
• 1 culleradeta de gel de color vermell

Elaboració:
1. Comencem pel pastís.
2. Fonem la xocolata amb la mantega.
3. Afegim oli, vainilla i sucre i barregem.
4. Incorporem els ous i batem bé.
5. Afegim els ingredients secs (cacau, llevat i farina).
6. Barregem fins a obtenir una massa homogènia.
7. Afegim l’aigua calenta i integrem bé.
8. Aboquem al motlle i enfornem 1 hora.
9. Deixem refredar i desemmotllem.
10. Preparem la cobertura mentre es refreda.
11. Batem la mantega fins que quedi esponjosa.
12. Afegim el sucre llustre en tandes.
13. Incorporem vainilla, llet i colorant.
14. Apliquem la cobertura amb el pastís fred.
15. Allisem la superfície del pastís.
16. Marquem la forma de cor amb una plantilla.
17. Estenem la cobertura fins al resultat desitjat.
