Kathal (Jackfruit) Do Pyaaza - a delicacy which I love to cook quite often! One of our side dish for lunch today!
Recipe:
Ingredients:
Jackfruit cubed 250 gm
Onions thinly sliced 500 gm
Ginger fine chopped one heaped tbsp
Garlic cloves sliced 1 tbsp
Whole Kashmiri red chillies 2-4
Bay leaf / tejpatta 3-4
Black cardamom 2
Green cardamom 2
Cloves 5-6
Cinnamon stick 1 inch long broken
Whole black peppercorns 2 tsp
Cumin 2 tsp
Mustard oil 2 tbsp

Method:
Coarsely grind cumin, black pepper, cardamoms, cinnamon and cloves and keep them separately.
Now heat oil in a pan, sauté the ground spices, whole Red chilies and bay leaves then add sliced onions (double the weight of the jackfruit to be cooked) and fry until translucent.
Then add grated ginger and garlic and stir for some time with a ladle.
Then add diced raw jackfruit, add salt and coriander powder and cover and cook on low flame for a while.
Then add half a cup of water and let it cook covered on low flame for 10 - 15 minutes or till the jackfruit is cooked.
Garnish with chopped fresh coriander!
Kathal Do Pyaza is ready, serve with roti or paratha or daal rice!

Lucknowi mini Samosas…our homemade teatime snack yesterday!
Lucknow samosas are made with a Potato stuffing which is quite different from that of Punjabi Samosas…simply due to no use of garam masalas…it a very flavoursome magic combination of Coriander seeds, Fenugreek, Cumin & Black Pepper corns…all roasted until fragrant then coarsely ground! This is generously sprinkled over diced potatoes which are first sautéed with ginger & green chilies. This is then cooked under a lid on slow flame with a little sprinkle of water to get the flavours infused thoroughly. Finally it is finished with seasoning & very little dry mango powder(Amchur).
The pastry part of these samosas is quite critical as it is made with 8 : 1 ratio of APF vs Ghee / Oil. So for 2 cup of Maida use 1/4th cup of oil to patiently rub the flour with hands before kneading a tight dough using water! Let this rest for 30mins under a damp cloth. This helps you get a perfect pastry dough to roll out for Samosas!
That reddish dry chutney seen in the frame is again an unique formula…made with Boondi (savoury pearls of gram flour) mixed with roasted turmeric, garlic powder, dry mango powder & red chilli powder…the mixture is coarsely ground! This goes so well as a condiment with the samosas! This even enhances flavour of Kanda Bhajiya or Vada Pav! Please remember this is quit different from the usual peanut- garlic dry chutney which is a commonly used for Vada Pav!

Quintessential wintery combo of ‘Sarson ka Saag - Makke di Roti’ needs no introduction! Winter is the time for comfort, good food & warmth. Best part of the winter is the treats it brings along. Each season has a special dish…a special veggie/fruit. As it’s mangoes during summer so do Carrots and greens during winter.
Sarson ka saag is a dish we have all grown up with. It is a dish which comes from rustic roots and flavors closest to heart. It has an earthen taste. Simple flavor and hearty meal makes everyone happy. Traditional meal has loads of white butter or ghee. You may also use oil if wish to go vegan. Sarso ka saag or mustard leaves curry is a great way to have greens. We cook it along with other greens like Bathua & Palak and served with maize flatbread or Makke ki roti. Don’t miss to make it once during this winter!😀
Do not hesitate to ask for recipe if desired! 😬
