Roasted Grape Kale Caesar Salad🍇🥬 I wish I could take the credit for this beauty but it’s a recipe from the one and only @ottolenghi - the king of making vegetables cool 🙌🏻✨I made few tweaks, adding fennel which I love and pecans for crunch. If you never roasted your grapes you are missing out! It’s out of this world 👌🏻😋

Kale is packed with vitamins A, C and antioxidants that help support healthy skin and collagen production, while grapes are rich in polyphenols and antioxidants that help protect skin cells from oxidative stress.
Save this one for your next seasonal salad! 🤍

Serves 2 as a side

Ingredients:
1 head of romaine lettuce
2 handful of curly kale - stems removed
1 medium size fennel - sliced really thinly ideally using a mandolin
A handful of pecans or walnuts
400g red seedless grapes
Extra virgin olive oil for roasting
Salt and pepper to taste

For the dressing:

3tbsp Greek yogurt
2 tbsp runny and smooth tahini
The juice of 1 lemon
1 tsp dijon mustard
50g grated parmesan + extra for sprinkling on top
2 tbsp extra virgin olive oil
3 anchovies

Add the grapes to a large baking tray and drizzle with some olive oil and a pinch of salt. Toss everything together and roast them in the oven at 180 degrees Celsius for 15 minutes until soft but still keeping their shape. In a separate tray add the pecans and toast them in the oven at the same temperature for 7-8 minutes. Remove, let cool down completely then roughly chop.
In the meantime add the kale to a large bowl with a pinch of sea salt. Using your hands massaging until it starts to feel softer. To the bowl add in the romaine and fennel.
To make the dressing add all the ingredients into a small blender and blend until smooth and creamy.
Pour the dressing over the kale mix and stir everything together until well coated.
Add in roasted grapes and pecans. Serve with a generous grating of parmesan.

Yesterday we hosted our biggest RECO HQ event yet 🌟

A full morning dedicated to training, fuelling, recovery, sleep and slowing down. 70+ people. One incredible community.

Our Summer Send Off was designed to be a complete 360 reset as we head into a new season, and yesterday really felt like everything RECO HQ is about coming to life.

We kicked things off with The Full Reset Panel, hosted by our very own @zoekerr13, bringing together some brilliant minds across performance and wellness:

🧠 @drpetertierney on building your training and what actually moves the needle on performance
🥣 @eleanorhoath_, Founder of @_thewelledit, on fuelling, energy and cutting through the noise around supplements
😴 @joshbirbeck, Co-Founder of @sleepgym_ on sleep, recovery and the small changes that make a big difference
🧘🏼‍♀️ @whatsgoodkat, Founder of @yogi.bare & @resette.world, on slower movement and building wellness brands
🧊 And our Founder @emilyhelenhughes on why we’re building RECO HQ around making recovery a habit, not a luxury, and why community is such a huge part of making it stick.

Then it was time to actually put recovery into practice, with ice baths, compression, red light therapy, breakfast, matcha, refreshments, goodie bags and plenty of time to hang out with the community.

A HUGE thank you to all of the incredible brands who helped us bring yesterday to life:
@hyperice @sunlighten.uk @i.am.suki.bains @marchon @newacreswandsworth @perfecttedenergy @eleatcereal @hellonuchu @berkeleyhealthuk @myomaster @sleepgym_ @barebells.uk @aguademadre @foundryuk @thenourishedcore @slowmorningsldn @chrismforde 🩵

And most importantly, thank you to every single person who came down and spent their Saturday morning with us. Seeing so many of you together, connecting, learning and recovering is exactly why we started RECO HQ in the first place.

We’re building the new default social setting for people who care about how they feel.

And after yesterday, we are more excited than ever to get our doors open 🔥

New Acres, Wandsworth Town, we’re coming for you!!

Your London City Wellness Guide is here with @eleanorhoath_ , nutritionist and founder of @_thewelledit ☎️

For the latest Living Well City Guide, we’ve asked Eleanor, the go-to person for all things wellness in London, to share the places she returns to for good food, movement, a little downtime and everything in between.

Think favourite Pilates studios, healthy lunch spots, places for a good coffee (and of course matcha), and the London addresses worth knowing - all mapped out through Eleanor’s eyes.

Sweet Potato Yogurt Boats 🍠These are one of my favourite skin friendly treat to make especially when the colder months approach, they are super simple, refined sugar free and they always hit the spot! They have a hefty dose of skin boosting vitamin A + antioxidants from the blueberries 🫐 And baking them like this is the best way to get them super jammy 😋 I promise you, once you try them you won’t be able to stop making them 👌🏻( I bake extra in advance so I can keep them in the fridge)

Ingredients:

2 medium size sweet potatoes - cut in half and skin on
Unsweetened yoghurt of your choice - I used @theestatedairy Greek yogurt
1 cup of frozen blueberries
A generous drizzle of nut butter of your choice - I have used peanut

Line a baking tray with some parchment paper.
Rub the sweet potatoes with some olive oil. Place them face down on the baking tray and bake in the oven at 200 degrees Celsius for 30-35 minutes until they feel soft.
In the meantime add the frozen blueberries to small pan on a medium heat and cook them down for around 8 minutes until they have a jammy kind of consistency.
Remove the sweet potatoes from the oven and flip them over.
Using a fork mash down the middle slightly. Top them with a generous dollop of yogurt.
Add the stewed blueberries on top and drizzle with the nut butter.

Celebrating being ELECTRIC with @volvocaruk @sheselectriclive @themodems

There was an accident on the M1 so we jumped out the Addison Lee and onto the Great Northwestern for 45 minutes in the Cotswolds. BUT it did mean I didn’t get car sick trying to work on this weeks @_thewelledit newsletter 💚

A pleasure to talk about what being WELL actually means in the modern tech world & meeting @emmybrunnerofficial @drstephkuku

Thank you @williamcostelloe for inviting me to celebrate what truly is a BEAUTIFUL collection 🤍

Fun fact, my Mum bought me this bag over 10 years a go & there’s something quite funny sipping a matcha waiting for a fashion show in the finance district 💚

Ps; @elevatewellnessuk matcha was worth the wait (and the hype)

Obsessed with my new @merit lip combo 🩷

The photo I sent my mum at 7:30am … & I’ve put this outfit back on for dinner with a curated list of people doing flipping fantastic things 🤍

August was holidaymaxing in every sense. But we’ve realised it’s not always a beach or a pool in Europe that actually resets us.

So when Eleanor and Alicia went the other way. Off grid, into greenery, straight to the Alps.

Sweated it out, stripped it back, breathed actual mountain air instead of scrolling. The ultimate green time before screen time.

Comment ALPS and we’ll DM you where we stayed 🏔️
