BEAUTIFUL PARTY PEOPLE by Studio Sieler! On Tuesday night, we hosted a little party at @andazlondon to officially launch the first issue, and we had the great @studiosieler @francescasieler set up their Live Portrait Studio to capture all the amazing friends that came to celebrate with us!

SLOW ROASTED TOMATOES WITH OREGANO AND GARLIC.

Slow roasted tomatoes offer a deep concentrated flavour that will complement any dish.
You can pair slow roasted tomatoes with just about anything – put them in a salad or pasta, soups and stews or serve them on crusty bread with cheese for a tasty snack. My favourite, just add as a relish to your main meal.

Tomatoes also have a wealth of vitamin and mineral content, including:

18 mg of calcium
427 mg of potassium
43 mg of phosphorus
24.7 mg of vitamin C
1499 international units (IU) of vitamin A
Tomatoes also contain a wide array of beneficial nutrients and antioxidants, including:

alpha-lipoic acid
lycopene
choline
folic acid
beta-carotene
lutein

The cooking of tomatoes appears to increase the availability of key nutrients, such as the carotenoids lycopene, lutein, and zeaxanthin.
The health benefits can vary between different types of tomatoes. For this recipe I’ve chosen cherry tomatoes as they have higher beta-carotene content than regular tomatoes.

So here we go.
5 mins prep.
2-2.5 hrs cooking.
You Will Need
700g Tomatoes.
2 cloves of garlic (optional)
Dried Oregano.
Salt.
Pepper.
Olive Oil

Heat the oven to 150°C (gas mark 2). Oil a large non stick baking tray.

Rinse and dry the tomatoes. Cut each tomato in half and place - cut side up - on an oiled oven tray.

Lightly drizzle the tomato halves with olive oil, then sprinkle evenly with oregano, 2 crushed cloves of garlic (optional) then season with sea salt and freshly ground black pepper.

Roast for 2 hours or until the tomatoes are darkened but still slightly moist. If you prefer your tomatoes drier cook a bit longer.

Remove from the oven when done and set aside to cool.

Once cooked, transfer to a resealable container to store in the fridge.
You can also freeze them in batches to add to sauces, stews and soups..
