Chicken Pot Pie Egg Rolls & Creamy Dip 🥧✨

A comforting twist on a classic — flaky, creamy, and full of rich homemade flavor. Perfect for cozy nights, holidays, or game-day appetizers!

⸻

🛒 Ingredients
	•	Leftover cooked chicken (I used about 14 baked chicken legs, meat pulled off the bone)
	•	1 medium onion, diced
	•	5 cloves fresh garlic, roughly chopped
	•	2 carrots, chopped
	•	3 celery stalks, chopped
	•	2 ears of corn (cut in half — total of 4 small pieces, kernels removed)
	•	1 cup frozen peas
	•	3 tbsp butter
	•	½ cup cornstarch
	•	2½ cups chicken stock (for slurry)
	•	1 full deli cup (about 32 oz) chicken stock, added to the pot
	•	1 cup heavy cream
	•	Seasonings: roasted vegetable seasoning, white pepper, complete seasoning, oregano
	•	Cheese of choice (for the dip)
	•	Egg roll wrappers
	•	Cooking oil for frying

💡 Chef Tip: Save your veggie scraps and chicken bones to make a rich, homemade stock for future recipes!

⸻

👩🏽‍🍳 Directions
	1.	In a Dutch oven over medium-high heat, add your preferred cooking oil.
	2.	Once hot, add onion, garlic, celery, carrots, and corn. Sauté until fragrant and slightly softened.
	3.	Season with roasted vegetable seasoning, white pepper, complete seasoning, and oregano.
	4.	Add frozen peas, pulled chicken, and butter.
	5.	In a separate bowl, whisk together cornstarch and 2½ cups of chicken stock to create a slurry.
	6.	Pour the slurry into the pot, then add the full 32 oz deli cup of chicken stock and the heavy cream.
	7.	Stir well and let simmer on low for about 5 minutes until thickened and creamy.
	8.	Remove from heat and allow the mixture to cool before using.

For the Egg Rolls:
	•	Add cooled filling to egg roll wrappers, seal edges with cornstarch slurry, and fry until golden brown and crisp.

For the Dip:
	•	While the filling is still warm, stir in shredded cheese for a creamy finish.
	•	Cut extra egg roll wrappers into triangles, fry until golden, and serve as crispy chips for dipping.
