So this is why I have the best Zumba instructor and dancemates ever. Our phenomenal instructor Megan Knee told us last week that she wanted to hold a gathering after tonight’s class as a thank you to her students. Megan brought a bottle of rose; delectable cheeses and crackers and some veggies and the ridiculously talented baker Carol Olsen volunteered to bring cupcakes and she made the most decadent chocolate / peanut butter cupcakes. I of course brought a bottle of Veuve Cliquot, which quickly disappeared. Megan went to open the bottle of rose but realized she forgot a cork screw. But ever resourceful, she tried several methods until she managed to push the cork into the bottle. We toasted to years of friendship, of Peggy’s engagement and our love of dancing together. The perfect Thanksgiving eve!!

Well we are off to Austria for this weeks #quarantinevirtualbakeoff of 2021! This weeks task was to create an Austrian dessert, i.e... tortes, strudels and every other dessert that is sure hard to pronounce! I chose to go a dessert soufflé route with a Salzburger Nockerl. Hailing from the city of Mozart, this light and fluffy dessert may remind some people of Salzburg’s snow capped-mountains. I had to make the mixture twice as I knocked back the fluff way too much and the second try was much better. It only cooks for about 10-12mins, and I think I took mine out 1 min to early, but it still held its form! I chose not to show inside pics as it became a complete mess and needed that extra minute! It had a sweet and foamy texture, that I am sure, would I have left in 1 min longer would have set nicely! Can’t win em all!! Stay tuned for more bake-off posts in 2 weeks! Make sure to follow @adventure_carol @amykisawesome @dextermydude to see their bakes and the deliciousness they are creating too!

In this 11th and final week of #quarantinevirtualbakeoff the ingredient was back to basics with Chocolate! I present to you Maryland’s (My old stomping grounds) Smith Island Cake. Smith Island, an island situated on the Chesapeake Bay between Maryland and Virginia and only reachable by boat, is home to this epic beauty. The cake, dates back to the early 1800s (or even 1600s depending what you read!) when Smith Islanders would send the cake with watermen on the autumn oyster harvest. It’s frosted with fudge instead of buttercream because the fudge lasts much longer. Today the cake towers with anywhere from 8-14 ultra thin layers and comes in a variety of flavors like lemon, carrot cake, coconut, and strawberry. We’re sticking with the original Smith Island cake, a moist yellow cake with chocolate fudge icing. Enjoy!! #quarentinebaking #smithislandcake #maryland #chocolate

In this 10th week of #quarantinevirtualbakeoff the ingredient was Berries! I present to you Mixed Berry Pavlova. The delicate crunch of the pavlova mixed with the homemade raspberry jam sauce and mixed with the fresh whipped cream created the perfect bite!!! It is not the most photogenic dessert but well worth it! Enjoy!! #quarentinebaking #pavlova #barefootcontessa

In this 9th week of #quarantinevirtualbakeoff the ingredient was Coconut! I present to you Tres Leches Cake With Coconut Chantilly Frosting. The tres leches cake has a denser texture versus a light and airy texture. It also has a stronger emphasis on vanilla and using coconut cream. I added strawberries for just a touch of tartness! The coconut whipped cream topping is smooth and not too rich! Enjoy!! #quarentinebaking #treslechescake #coconut

In this 6th week of #quarantinevirtualbakeoff the ingredient was Honey! I present to you Honey Rosemary Polenta Cake with Clementines. By infusing the milk with sprigs of rosemary the softness of the herb came through and mixed so well with the honey in both the cake and the whipped frosting. The clementines added a sharpness that blended well with all the ingredients and gave it just a bit of tart!! Enjoy!!
