Want to cook Indian dishes at home but aren’t sure where to start? Get to know your spices.

Earthy cumin, citrusy coriander, fragrant cardamom and golden turmeric each bring something different to the pan. And how you use them matters: toasting whole spices or blooming them in oil helps bring out their flavor.

@ajw.author's latest blog explores common spices, flavor pairings and garam masala, a warming blend that varies by region and kitchen.

You don’t need to fill your cabinet with 20 new spices. Start with a few, experiment and build confidence one dish at a time.

Late-summer cooking doesn’t get much better than ratatouille. This simple, colorful stew is packed with eggplant, zucchini, peppers, tomatoes, fresh basil, and all the cozy end-of-season flavors we want right now.

There’s also a sweet story behind this one: the dish — and the movie — holds a special place in @ajw.author's heart, which makes this recipe even more worth savoring. If you’re craving something homemade, seasonal, and full of character, this is a great one to make before summer slips away.

See link in bio for the full recipe.
