I entered this dish for @charityfoodfight a long time ago. I always thought to myself, if I were a vendor and had one shot to sell, then I would need to be different.
.
This Mac and Cheese does that. There is a cheese sauce with added ube extract to make it purple, and a version of an adobirria that glued it together. It’s finished with queso fresco, and tortilla strips because Texas.
.
This is the first dish that I’ve cooked for @amberlanetxyall, @seekaychin and @hannahruckertv . I remember not walking away with the trophy that night, but I just know that in my relationship with them now, I know I made a lot of noise.
.
Fast forward to now, I’m using this dish as a wedding vendor for @themamaison . @samantha.ro5 and I are getting married here in November, and it was for sure, a conversation starter. Because if they’re not going to hire me now, then at least they’ll talk about why my pasta is purple or why my calling card says “Yes, I have seen the bear.”
.
I guess that’s what cooking with intention means. To have one foot in the door and seeing what happens.

Incredibly grateful to be a part of @atxjulsey and Michael’s baby shower. She came to me as a referral from @amberlanetxyall , a proof that community and word of mouth will always be the best referral source.
.
When Julie and I had the conversation, she wanted the funky menu. Then and there, we clicked.
.
For her, funky cheeses, a bacon jam burger, a fried chicken sandwich, cream puffs and chocolate glazed donuts were they key to her and the twins hearts. Who knew?
.
We met some new friends as well with @teatraditionscatering and @morimatcha_ . Growing relationships in this profession is so fun because you never know who you will meet!
.
And lastly, a shoutout to @umamisogood and @beauty_within_hersoul_ for being the backbones of this event and making it a wonderful experience for all!

Girl Dinner doesn’t have to be Takis and cottage cheese with pickles. It CAN BE.

OR

It can be mashed cauliflower with roasted asparagus, seared jumbo scallops and a tarragon, tomato, meyer lemon, garlic cream pan sauce.

Life is short, so go on and do the dang thing🚀👏

A little of my favorite BTS action from filming back in the Fall, that has all been living quietly in my phone’s camera roll for the past 8 months🤫

Zero regrets, and instead only a ton of great memories and wonderful lifelong friendships made throughout the process❤️

P. S. Please dump a pile of bacon and eggs in the trash for me in the morning, in my honor.

This week is finale week on @nextlevelcheffox . Starting on the very first season during early 2022. It started with 15 incredible chefs and then after some intense challenges, we then had three, including @chefpyet , @reuelvincent and @i_am_mariah who are about to do a very intense challenge from @gordongram , @nyeshajoyce and @richardblais . But not without a little bit of inspiration and motivation..
