Holy.Moly. 🤤🤤🤤
This recipe is packed full of flavor AND protein!!
Roasted veggies (cabbage, leaks, carrots, broccoli & red onion) over a creamy tofu mustard whip, topped with a scrumptious pistachio pesto! It’s such a flavor bomb!! I don’t think I’ve ever tasted food that’s as delicious as all these plant based recipes I’ve tried over the last four and a half years!!

Roasted veg has my 💚 🥦🧅🥕. This dish celebrates humble vegetables, letting their gorgeous flavors truly shine.

Recipe by: @ameliasandy_

Recipe:
Wash and halve your chosen veggies. I used Tenderstem broccoli, sweetheart cabbage, leek, carrot, and onion. Toss them in an oiled baking dish, drizzle with extra oil, and sprinkle with sea salt. Roast at 170°C until cooked through and golden.

To make the pistachio pesto, blend 30g basil, 50g pistachios, and 80ml extra virgin olive oil in a food processor or grind together with a mortar and pestle.

For the whipped tofu, blend 150g tofu, 1 tbsp nutritional yeast, 1 garlic clove, a pinch of salt, a splash of soy milk, and 1 tsp mustard until smooth.

To serve, plate the whipped tofu first, then add the roasted veg, top with the pistachio pesto, and enjoy!

Sweet Potato Brownie Recipe 🍠🍫

These sweet potato brownies are rich, fudgy, and secretly packed with nutrients — the perfect treat with a wholesome twist!

Ingredients:
• 1 large sweet potato, peeled and diced
• 1/4 cup peanut butter
• 1/4 cup coconut sugar
• 1/2 cup cacao powder
• 1 cup flour
• 1 tsp baking powder
• 1 tsp salt
• 1 tbsp olive oil
• A large handful of chopped walnuts

For the Frosting:
• 1/2 tub vegan yogurt
• 1 tbsp melted Biscoff spread
• Optional: vegan chocolate chips for topping

⸻

Instructions:
1. Steam the sweet potato for about 15 minutes, or until soft and mashable.
2. Transfer to a mixing bowl and mash until completely smooth, with no lumps remaining.
3. Add the peanut butter, coconut sugar, cacao powder, and flour. Mix until combined.
4. Stir in baking powder, salt, olive oil, and chopped walnuts. Mix well.
5. Pour the batter into a lined baking dish and smooth out the top.
6. Bake at 180°C (356°F) for 30 minutes. (Note: You had 180°F — that’s too low for baking. I’ve corrected it to 180°C.)
7. Remove from oven and let cool completely.

⸻

Frosting & Toppings:
1. In a small bowl, mix together the vegan yogurt and melted Biscoff until smooth.
2. Spread the frosting over the cooled brownies.
3. Top with chocolate chips if desired.

Slice, serve, and enjoy every gooey bite! 💛

Chocolate & Tahini Banana Bread 🍌🍫
And Why It’s Totally Worth Your Time

Makes 8–10 slices

In a large bowl, mash 3 overripe bananas. Add:

1 tsp vanilla extract

200ml vegan buttermilk (mix 200ml soy milk with 1 tsp vinegar, let sit for 5 minutes)

1/3 cup neutral oil (like vegetable or sunflower)

1/3 cup maple syrup

1/3 cup tahini

Mix until well combined.

Then add:

200g plain flour

1/2 cup cocoa powder

1 tsp baking powder

1/2 tsp bicarbonate of soda

1 tsp cinnamon

Stir everything together until smooth. Pour into a lined loaf tin and sprinkle with chocolate chips on top.

Bake at 170°C (340°F) for 45–50 minutes, or until a skewer comes out clean.

Let cool slightly, then serve with an extra drizzle of tahini and a sprinkle of cinnamon.

what I made with my CSA (Community-Supported Agriculture) box this week! 🧅
•
1) spring salad with cipollini onions inspired by a reel from @daniellemariealvarez

2) “Veggie and Bean Vegan Breakfast Hash” by @karissasvegankitchen

3) “Romesco sauce with charred zucchini, warm quinoa and chickpeas, and crispy kale” from @ameliasandy_ with an apple for lunch :)

4) Full haul from @salmonberrygoods

5) A peek behind the scenes of my recipe planning process 😉

6) was looking up hacks for how to use up the green ends of the cipollini onions (they are a little too tough to just chop and use). I decided to follow some Reddit advice to blend tops with some water and freeze to use later as onion-y flavor bombs for soups, etc!

I definitely could have prettied this up a little, but some meals I make just to eat, believe it or not 😂

The truth is, this is one of the tastiest breakfasts I’ve made in a while (actually ended up being my lunch). Very, very simple. Just a few ingredients in a bowl in the fridge overnight. Took 5 minutes to prep.

It was inspired by a recipe from @ameliasandy_
that I tweaked a little. Added some dates for sweetness, cinnamon for warmth, and some powdered peanut butter for flavour, protein, and healthy fats. Powdered peanut butter is about to become my new obsession! 😋
I also added creatine, but skipped the protein powder. Still on the fence about protein powder 🤔 so it’s more of an occasional thing for me.

These were the ingredients I used:

1/3 cup rolled oats
1/3 cup hemp seeds
1 cup soy milk
2 Medjool dates finely chopped
1tbsp powdered peanut butter
1 tsp vanilla
Some cinnamon

Mix in a bowl and top with raspberries, walnuts, and sesame seeds. Cover and put in the fridge overnight.

If you want it to look pretty, put the raspberries, walnuts, and sesame seeds on top the next morning, but I like how all the flavours and textures marinated together. And the dates give it the perfect amount of sweetness 🌸

You could easily make 3 or 4 of these in one go, and have breakfast ready to go throughout the week. Let me know what you think 😊
