I'm having the time of my life in Mexico learning about regional beekeeping practices and tasting the incredible honeys here. My nerdy honey heart is FULL to the brim 💛 Very excitingly I am bringing some of these very special honeys back to the UK for us to taste on my upcoming woodland beekeeping feasts (link in bio) BUT I need your help! "The FT would like to talk to you about baked beans?" is one of the more surreal emails to land in my inbox 😅

Turns out Ajesh Patalay & the FT How to Spend It team had got wind of some surreal bean antics last summer...'Honey' & I were welcomed into the 64,000 strong Jamie Oliver's cookbook club and one particular recipe stole the show; my Broken Beans 🫘 Proud pics started flooding in on the global fb group, with keen Australian cooks explaining tinned baked beans to the Americans, a few (accurate) 'wait this is just beans with stuff?' observations, all culminating in a bougie beany fervour that coined a new era - 'Before Broken Beans' / 'After Broken Beans'. It's a fridge raid comfort dish for when you or someone you love is feeling a bit broken; a hug-on-a-plate 🤍 If you're the sort to feel the need to carve out 15 mins of culinary self-care whilst wfh (I-must-chop-something-!) this one's for you.

"Nigella Lawson mentioned you in a post" is a VERY enjoyable notification to wake up to! Thank you to THE culinary queen bee @nigellalawson 👑 for sharing my honey on toast ice cream (slide two) which is a comforting and nostalgic take on brown bread ice cream (IYKYK).
It's clearly high time I shared the rest of Honey's iced desserts to tempt you all, it's a collection I'm particularly fond of.
First up this blushing trio of spiked granitas - vodka/bitters/lime/eucalyptus honey; mezcal/hibiscus/blood orange/yucatan honey; campari/gin/watermelon/mint/acacia honey. Delightfully easy. Forkfuls straight from the freezer after dinner 👌
Next, the ice creams! After Nigella's favourite 🙃 there's burnt honey dulce for a smoooth bitter caramel fix, then roasted black sesame & ricotta with swirls of pomegranate molasses and bramble honey (the first recipe I wrote for Honey), and le grande finale...honey roast fig with amaretti AND amaretto 😎
The clincher? No ice cream machine required 🙌 Walk, don't run; link in bio 🍯

Caught mid sniff 🍯 We jarred up the first beech wood honey harvest ready for guests this weekend. So exciting! It's pale gold, mild & sweet with some gentle green sappy notes ✨️ I might jar some for sale on here, if anyone's interested? 🍃 I'm looking forward to experimenting with it in the kitchen. Maybe a nice light sparkling mead, or green melon sorbet 🍈

I have been impatiently waiting for the fig tree in my garden to come into leaf for what feels like a century this year, but it's finally summer & they're here. My favourite way to cook with them is toasting the leaves in the oven to flavour a heather honey panna cotta. For my woodland feasts I blend & strain them into olive oil to dress fresh Puglian burrata & heritage tomatoes. But really this whole dish is just an excuse for mopping up with my garlic fermented honey & preserved lemon focaccia! Recipes for both the panna cotta and focaccia are in 'Honey' 🍯🌿

Receiving particular praise on the strength & quality of my recipe writing was extra special; 'It could have been Delia' knocked me for six 😱 I couldn't be more grateful. Thank you @thegfw 🙏 Congratulations to the other winners, nominees and their teams, it's a privilege to be amongst you. A huge thank you to my brilliant Honey team, this one's for you. I spent yesterday in shock tucked up in bed with a packet of ginger nuts processing it all...now it's time to clear the crumbs & get on with book 2 I think? 🤓

Absolutely chuffed to spot a couple of early flowering Echium wildpretii on the sub-alpine slopes of Mt Teide yesterday 🩷 Super dramatic & covered in wild bees. A lucky find as the main bloom is a couple weeks away. Thank you @jess.snowball for the botanical recs!

A big hello and haaaappy Easter to everyone who's found me here via @sundaybrunchc4 today! 👋😘 If you missed my announcement this morning, I've added 3 new dates to my sold out series of Woodland Beekeeping Feasts this Summer 🤗 you know what to do, head to the link in my ig bio to book/read more. Today I cooked up one of my fave recipes from my book 'Honey - Recipes from a Beekeeper's Kitchen' (also at the link in my bio), radicchio pear salad with spiced grapefruit and fennel fritto misto, with a drizzle of @thenoblebees super floral wildflower honey. It's easy, looks fancy as, and happens to be vegetarian and gluten free, with a moreish light crunch. What more could you ask for?! Recipe over on @sundaybrunchfood 💖 Over the moon that I got to cook for the great @itsanitarani @gabyroslin and @gylesbrandreth. Shutting the front door on my left hand and mandolin-ing my right was totally worth it 🤣 Thank you @rimmersimon for sous-ing 👌

I ran away to Norway! Part one of our adventures = kayaking Lysefjord with @nordicpaddling Gliding past roaring waterfalls, a fearsome view up to Pulpit rock, the whole fjord to ourselves. Bliss.
