POSTS STORIES REELS TAGGED
Last week I was interviewed by the the amazing Paroma, from @animaguseats, a blog focusing on vegan recipes and inspiration. I loved sharing some more personal details about my vegan journey, what was the motivativation for me in the
first place and how it worked out eventually for me. Paroma curated some really thought-provoking for me, which I highly recommend you to read in the full interview. This is one of them: "What is the most common veganism or sustainable lifestyle related question that a lot of people ask you & what is your answer to that?
I guess the most common question is “How do you manage to always find a sustainable and vegan option of everything?”. The answer is of course, that I’m not perfect and nobody has to be. You just have to do your best to cause the least possible harm. My Instagram page is not a place where people are judged whether they are not 100% zero waste or vegan. It’s an open space to share information, experiences and thoughts, to encourage and empower one another. Perfection isn’t what matters, what matters is effort and intention. The most common fashion related question I get is “How can I choose more sustainable clothes?”. My answer, apart from mentioning ethical brands and thrifting as a great solution, is to point out that the real change in consumption comes from mentality change. We should think of our clothes as our everyday companions; therefore we can choose really carefully and consciously what we buy and who we support by doing this. By loving our clothes, we can expand their lifetime and prevent them from ending up in landfills!"

Vegan "Buttermilk" Pancakes:
Ingredients:
•¾ cup + 2 tablespoons almond milk

1 tablespoon apple cider vinegar or distilled white vinegar

1 cup unbleached all-purpose flour or cup for cup gluten-free flour blend

1 tablespoon baking powder (NOT baking soda!) generous pinch of salt

1 tablespoon avocado oil or other cooking oil, plus more for pan (Can also use melted dairy-free butter)

2 tablespoons maple syrup , plus more for drizzling

1 teaspoon vanilla extract, optional

dairy-free butter, to spread on pancakes
•
Instructions
•
In a glass measuring cup or small bowl, combine milk and vinegar. Let sour while you combine other ingredients.

In a mixing bowl, combine flour, baking powder, and salt. Stir in oil, maple syrup, vanilla, and sour milk, stirring just until combined. Don't over-stir as this creates tough pancakes. If batter is too thick, a little more milk may be needed (see note.) Lightly grease a non-stick pan or griddle and place over medium heat. When hot, add pancake batter by the ¼ cupfuls, flipping after a minute or so, when edges are set and a few bubbles appear at the surface. Makes 6–8 pancakes, depending on how big you make them. Serves 2–3.
Toppings: fresh blueberries, rasberries, strawberries and banana! Maple syrup or date syrup! •
To make waffles with the same ingredients you should add some more flour!

It’s the time of year when people start thinking about their #newyearsresolution. Many of which fail by February. I speak from experience! No judgements here. ✌️
.
Last year I made a similar resolution that I’ve made countless times before. Only this time was a little different. I didn’t crucify myself or give up when I indulged in something sweet. I didn’t hate myself for “cheating”. Each time I “failed” or fell off the wagon, I picked myself up and got back on track. This #weightlossjourney is not a linear road. There are bumps and curves along the way. And that’s okay!!! 🙌🏻 After all, #slowandsteady wins the race! 🐢
.
So this time, I urge all of you looking to make a change in your life. Rather than setting unrealistic goals, just resolve to pick yourself up when you fall! Just keep going. #youvegotthis 💪
