Fun, vibrant, colours, punch, boundless enthusiasm summed up @kitafoodfestival 4-hand Spanish Mexican tapas night by Chef Chele Gonzalez from @gallerybychele in Manila and Chef Sergio Meza of @manorestaurant.kl

The setting was refreshing (and lovin’ it) compared to other KITA dinners. The night kicked off upstairs in the Chef’s Table area, with nibbles and canapé circulating – Seafood Toastadas, Laksa Inasal, Croquetas, Ceviche. To complement, welcome drinks featured the refreshing Mono Fizz with Roku Gin, Grape, Gingerflower, Fizz, and the invigorating Kakubin Whisky Highball.

Downstairs, where seating was free and easy, we gathered around live stations to witness the chefs at work. We watched eagerly and hungry for more, as chefs prepared the dishes - a harmonious blend of Spanish-Latin flavours. Pastrami Tacos, Sour Short Ribs in a sauce overcoat, meat came away from the bone with a tug of the fork, Pescado a la Talla, Paella with grilled prawns that was full of hidden depths that stops the clock.

One of the most captivating surprises came from the dessert section by Pastry Chef Ariel Millaman – flan drenched in caramel presented ingeniously in tart aluminum foil, and Bibingka Cheesecake wrapped in banana leaves with shavings of cured egg yolk.

The food is great. The energy at the open kitchen, right here, is always with enthusiasm, passion and energetic. But none of that matters if your meal wasn’t memorable and engaging. Here, it really was. To top off an incredible night, Chef Chele turned to DJ Chele after the stoves were turned off, dancing away with infectious energy.
