It begins with smoke + salt.

Installment No. 003 of the G+S Supper Club opens with flame-kissed Murder Point oysters — briny, buttery, and grilled to perfection. It’s the kind of bite that reminds you why the Gulf is home.

Then, we go deeper — into charred romaine, creamy housemade Caesar, and the kind of crunch that only sourdough croutons and crispy capers can bring. A salad, yes. But not one you’ve had before.

The main course is where things heat up. Crispy-skinned salmon rests on a bed of jasmine rice, bathed in a velvety roasted red pepper and Calabrian chili cream. It’s bold, elegant, and just the right amount of spicy.

And just when you think it’s over — there’s cobbler. Warm, golden, and bubbling with sweet Alabama peaches, tucked beneath a biscuit crust and crowned with vanilla bean ice cream and bourbon caramel.

The air smelled of salt and fire. The kind of scent that lingers on your skin, reminding you that something special just happened.

Last week, I had the honor of working on the production team for Outstanding in the Field, a roving restaurant without walls that brings people directly to the source of their food. This particular long table? Set against the backdrop of Murder Point Oyster Farm in Bayou La Batre—160 guests dining on the very waters that produced the oysters on their plates.

From the moment the first chairs were placed to the last flicker of candlelight, I saw firsthand the precision, intention, and care it takes to produce an experience like this. It was more than a dinner—it was a story told through food, land, and the hands that brought it all together.

Chef Arwen, a James Beard Award recipient and the force behind Red or White, crafted a stunning multi-course meal with wine pairings that spoke to the soul of the Gulf Coast. Clean, vibrant, and deeply connected to place—exactly how I approach food in my own journey as a chef. Being part of something this immersive, this intentional, only deepened my love for curating communal dining experiences.

As I build my own path—hosting intimate, storytelling-driven dinners—I’m reminded that food is more than sustenance. It’s a bridge, a connection, a shared moment. And when done right, it lingers, just like that scent of salt and fire.

STORY TIME: There was a moment, not too long ago, when I stood in this kitchen, completely still, asking myself a question I wasn’t sure I was ready to answer: “Am I really a chef?” It felt too big, too official, too… something I wasn’t sure I could claim.

I needed to know, what makes someone a chef? Titles? Culinary school? That unteachable je ne sais quoi? And as I scrolled through articles + reflected on my own journey, it hit me: I’ve been a chef.

God had been preparing me for this moment my entire life. From working in the industry since the age of 16, to owning @gingerandspicelife, I’ve been in the food and beverage industry—learning the ropes, sweating it out in kitchens, and understanding the heart of hospitality. In 2017, I created my first A Seat at the Table (@asattdinner) communal dinner concept while living in Washington, D.C., which wasn’t just about food; it was about community, creativity, and connection.

Since then, I’ve hosted more dinners than I can count, partnered in launching multiple food + beverage concepts, and poured my soul into creating experiences that nourish people—mind, body + spirit.

And yet, I found myself questioning my chefness. Isn’t that wild?

In the quiet, God whispered to me, “This is what you’re called to do. Step into it fully.” So here I am. Stepping. Fully. This supper club isn’t just another dinner; it’s a culmination of everything I’ve worked toward, every lesson I’ve learned, every risk I’ve taken to follow my passion. It’s my way of creating a seat at the table—for you, for me, for the community we’re building.

A Seat at the Table, oh how I’ve missed you! Last week I had an opportunity to blow the dust off of my very first business, which was created to inspire community centered around communal dining…dinner with strangers if you will.

It was my first time being the host and the Chef, which was so flattering because of all the compliments I received about the overall experience and delicious food. Thank you @kimkthegoalgetter + @chateaudemardi for hosting alongside me. So grateful that I don’t have to convince you to step in the ring with me.

To everyone who came, I’m so honored to have met and dined with you. Real relationships, with self + others, start at my table. Thank you for sharing space with us and being open to welcome community into your heart!
