Just over an hour’s drive from Dublin, @___omos in Abbeyleix feels like exactly what Irish hospitality needed. A refreshing, contemporary approach to the country house, with local produce, craft and a genuine sense of place at its heart.

The restaurant is undoubtedly the star attraction. Chef @cuangreene’s menu was unforgettable, each course telling its own story of local produce, foraging and farming. Some incredibly imaginative cooking, with fragrant flavours and unexpected textures that lingered long after each dish, prompting lengthy discussions around the table. One of those meals you find yourself thinking about days later.

What I particularly enjoyed was how that same appreciation for texture and craft carried through into the architecture and interiors. A former stately home, now thoughtfully modernised, with rooms that feel calming, warm and comfortable without being overly designed. Textural plaster walls, tonal timber ceilings, floors and panelling, with furniture and objects from local makers and younger craft ateliers. Hammered metals, worked timber, Irish linens and wools. So many lovely individual details.

The gardens are another highlight, almost painterly in their composition, with washes of wildflowers and colourful planting bringing a playful informality to the grounds. And a rather humble but perfectly placed sauna to sweat away the previous evening’s wine pairing.

A heartfelt thank you to the @___omos team, who each took the time to introduce themselves and made us feel so warmly welcomed. You can really sense the pride and pleasure they take in being part of Omos. And thank you to @hostandcompany for arranging the stay and giving me the opportunity to experience the hotel, its food and its beautiful surroundings.

There’s a difference between observing beauty + absorbing it. Some take it in literally, through what’s right in front of them. Others feel it. It’s an experience that leaves an impression, embedding itself within you. For those who feel it, beauty is often beyond the spoken word.

Ómós is this to me. A simple idea, once intangible, brought to life as something you don’t just see, but feel alive in its company.
