Meet my wonderful friend, private chef Ashton Keefe 👩‍🍳🥗 We first met through real estate, but our friendship quickly grew over a shared appreciation for good food, beautiful ingredients, and simple entertaining.

Today we’re making pan con tomate, a classic dish that’s as easy as it is delicious 🍅 Toasted bread, fresh East End tomatoes, garlic, olive oil, and a sprinkle of finishing salt come together to create the perfect summer lunch, appetizer, or snack. Happy 2nd anniversary to 15 Minute Meals! I know we’re in Slow Burn month, but have to still shout out my gorgeous third cookbook book baby, who is turning two tomorrow. The idea for this book came during the Covid three-meals-a-day for a whole family time, and feeling exhausted by thirty minute meals- we had to have better! And now we do! I love this book that allows you to be as lazy as humanly possible without sacrificing looking and tasting great. 🩷 Thank you to everyone cooking from it and loving it as much as I do. I’m so proud of her.

And shoutout to the amazing AMAZING team behind the photos, because they are so much more beautiful than they have a right to be. @NoahFecksIsAwesome, @elunken and @ashtonkeefe - I need to make 2026 the year I get to squeeze all of you again and tell you how much I love you to your faces.

I had just joined the @tuckernuck team when we had final rounds for our FW25 prints. I remember seeing this blue and white pattern and loving it. I kept imagining waking up on crisp January morning - a fresh blanket of snow on the ground and the glinting snow crystals dancing in the sun like a shimmering fleece. I imagined having breakfast at a table covered with this tablecloth - simple white plates, lots of shiny silver serving pieces, delicate glassware. And then it dawned on me - this tablecloth would also be perfect for Hanukkah! The cool blue and white tones warmed and softened by the glow of candlelight. I love the holidays - even the ones I don’t personally observe. There’s something comforting knowing so many people experience joy this time of year - and have for thousands of years. On our holiday menu: crowd-pleasing, savory-sweet stuffed pinwheels from chef and friend @ashtonkeefe. Save the recipe for your next party (and beyond).

Fig & Onion Pinwheels

1 to 2 tablespoons butter
1 onion, thinly sliced
1 sheet puff pastry, defrosted
¼ cup fig jam
½ cup shredded Gruyere or Swiss cheese
4 to 5 slices bacon, cooked and finely chopped
2 to 3 tablespoons grated Parmesan cheese
2 to 3 sprigs fresh thyme, leaves removed
1 egg, slightly beaten

1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.

2. Melt the butter in a large pan over medium heat. Add the sliced onion and cook, stirring continuously, until the onion is golden brown and caramelized. This can take 15 to 20 minutes. Add a splash of water if the bottom if the pan starts to brown or the onions begin to burn. When caramelized, remove from the heat and cool slightly.

3. Using a rolling pin (or wine bottle, in a pinch!), roll the puff pastry out into a 12-x-12 inch square. Evenly spread the fig jam on the rolled-out puff, leaving a ½ inch border along the edges.

4. Evenly sprinkle the caramelized onions, Gruyere, bacon, Parmesan, and thyme leaves over the jam. Brush the border with the egg.

5. Starting with the side closest to you, tightly roll up the bottom of the puff pastry until it reaches the middle. Repeat on the opposite side, and roll until both sides meet in the middle. This will form the shape of a palmier.

6. Wrap and chill for an hour. Freeze if not serving immediately. When ready to bake, slice into ¼” slices and place on the baking tray. Bake for 20 to 25 minutes, or until the cheese is melted and the pinwheels are golden. Plate and enjoy!
