We love a kitchen takeover and this one is particularly special with Chef Hamish from 1 Michelin Star, Aulis Phuket by Simon Rogan.

Thank you Hamish for taking over our kitchen and treating our guests to an amazing dining experience. Every dish was a conversation starter and the care and flavour in every bite had the whole room talking.

And to everyone who joined us, thank you for making it such a special evening.

Ideal for: a special occasion

Must order: the tasting menu

Aulis Phuket is Simon Rogan’s Michelin-starred chef’s table concept, joining his other Aulis locations in Cartmel, London and Hong Kong. Tucked away in Natai, Phang Nga, this intimate 15-seat restaurant delivers an experience that feels both world-class and deeply personal.

The food was delicious, the wine pairing was outstanding, and the service was flawless. And even with such great praise across the board one of the most memorable parts of this evening was the warm relaxed atmosphere, that made us feel as though we were sitting around a dining room table with friends.

The menu focuses on local ingredients, showcased through a range of techniques and flavours. This intimate chef’s table seats just 14 guests, with head chef Charlie Wilson and the team guiding you through each course as it arrives.

The service topped everything off and made it clear why restaurant manager Arsen Brahaj recently won the Michelin Service Award. The wine pairing was thoughtful, beautifully matched to each dish, and explained in a way that enhanced the experience without ever feeling overwhelming.

The overall vibe is perfect for anyone who loves understanding the story behind what they’re eating and drinking.

1. Simon Rogan’s signature truffle pudding caramelised in honey

2. Guava and yellowfin tuna belly tartlet

3. A pre dinner cocktail with our amuse bouche

4. Wagyu tartare with Mun Dang potato

5. Chicken wing with kaffir lime and khok kloi jalapeño

6. The fish they serve changes regularly depending on what is available - they had this huge yellowfin tuna whilst we were there

7. Coral trout, Koji butter, purple eggplant

8. Wagyu striploin served alongside braised Wagyu brisket with pumpkin

9. The making of the frozen yogurt palette cleanser

10. Jartisann ash goats cheese and Phuket pineapple

11. Pa khlok 90% dark chocolate with Phuket mulberry

12. Petit fours: lemon pastille, chocolate and banana, blackberry Bakewell, white chocolate and Wagyu fat

13. A parting gift

Beyond Stars | Gastronomic Odyssey | Kuching, Sarawak
.
They call Sarawak the Amazon of Asia. Nobody quite remembers who said it first, but it stuck, because it is true.
.
This is my home. The jungle I grew up beside. The markets I knew long before fine dining, long before Mia. Going back is how Top keeps learning who I was before any of it, through the food I ate as a kid. That is the part most people never get to see.
.
So six Michelin chefs are coming to my hometown to immerse on a culinary journey like no other.
.
Sarawak hands you things you cannot find anywhere else. River fish, jungle ferns, wild pepper, ingredients that’s belong to the third biggest island mass in the world.
.
The menu showing all of the 6 chefs journey while embracing the abundance of Borneo. Two nights in Kuching to find out if that holds.
.
Six chefs. One jungle. My home.
.
See you in Kuching 🥰

When you hear “fine dining in the south”, your mind probably defaults to the well-worn maps of Phuket or Krabi. But the true culinary soul of the region is much broader than those usual suspects suggest.

This edition of Koktail Kuisine spotlights five culinary destinations in Phang Nga and Surat Thani worth the extra travel time. From a chef’s table experience to toes-in-the-sand dining, these restaurants prove that when you pair a killer view with local ingredients, the result is nothing short of extraordinary.

AULIS - words cannot describe how memorable this was, not only was it the last day for this season before they reopen again but everything here was absolutely amazing. From the first moment you step into the restaurant the atmosphere and greetings by the team was warm welcoming. On the other hand, the 15 course chef’s table was out of this world!! From the first 4 bites to the petit fours, every dish was carefully thought out and cooked to perfection highlighting local produce. It’s definitely one fine dining restaurant worth going to if you are in Phuket. They will reopen again in November.
