Black bean brownies! Get some extra fiber and protein in the form of a brownie! Like most recipes with “strange” ingredients, you can’t taste the beans. As always, they’re vegan and gluten-free! Recipe from @cleanfoodcrush

Happy small business Saturday! I was super excited to try @thegreyhoundcafe for lunch today! I’ve heard many great thing about them since they are 100% vegan! I met the owner today and he is very nice and knowledgeable on being vegan. I got the cheesesteak (pictured here), and my mom got the queso and chips. We split the no bake cheesecake, which was both our favorites. Even if you’re not vegan, definitely check out The Greyhound Cafe!

Bagels all day everyday!🥯Is it just me or are bagels becoming a trend? I’ve seen a lot of people getting creative with bagel recipes and I’m here for it! For small business Saturday today I was back at County Bagel and Bakery and @playabowlswestchester ! I got a cinnamon raisin bagel with tofu cream cheese and the Ding Repair juice (cucumber, carrot, apple, beet, spinach, add ginger) Keep supporting your local business!

Trail mix oat bars inspired by @eatsofelle ! It’s kind of like baked oatmeal but in snack form and you can add or leave out whatever you prefer! So delicious!
~
Recipe:
2 cups oats
1 cup almond flour
1/4 cup chopped almonds
3/4 cup raisins
1/4 cup shredded coconut
3/4 applesauce
2 tbs maple syrup
1 flax egg
Vanilla extract
Pinch of salt
Cinnamon

Directions: Add all ingredients to a bowl. Mix, add plant milk if too think, and pour into an oven safe pan. Sprinkle almond, coconut, and raisins on top. Bake at 350F for 20-30 minutes (depending on thickness). Remove from oven, cut, let cool, and enjoy!

Happy Valentine’s Day!💘I celebrated a little early yesterday with the Bae Bowl from @playabowlswestchester ! I have never had anything but açaí as a base, but I liked the half pitaya held stupid Cupid. Of course I had to add banana and peanut butter (my favorite toppings). Remember, especially today, to take care of yourself before you care for others. Self care is always a great way to honor yourself, which I will be doing by taking a bath and painting my nails. Have a great day!

Something a little different today! @mealswithmolls and I teamed up to create Strange Things themed smoothie bowls! If you didn’t know, I’m a big fan. I love the nostalgia, soundtrack, and actors! I’m on season 3 right now (better late than never)! I had a lot of fun creating this bowl! Make sure to check out Molly’s post too!

Valentine’s Day is in a week! Here’s some deliciously sweet energy bites, recipe from @positivepolly___ ! I got a few questions at school about what I was eating for snack. The answer is these! Energy bites are one of my favorite snacks, because of the flavor and nutrition. The only thing I edited about the recipe is that I folded the craisins in instead of blending with the oats! Thanks Stephanie for the great recipe!

It’s Wednesday again...my least favorite day of the week. Something about virtual classes drains me, but last week I had enough energy to make pancakes for lunch. I fully support breakfast foods at anytime! This stack definitely lifted my mood!🥞What food brightens your mood?
