Watched a video on YouTube last week of @bald_bbq_uk making chicken tikka kebabs on his @weberuk kettle Mastertouch, where he balanced the skewers on the charcoal baskets to create a bit of distance from the coals and thought it looked good, so had a stab at it this evening. Chicken thighs marinated in Greek yoghurt with @thesmokeycarter mango and lime, tikka masala curry paste and lime juice. Also made a cucumber and mint raita to go alongside it with a very simple salad, all volleyed onto a garlic naan. Simple, easy, honest. No arsing about. Lots of fun to make and went down a treat. 10/10.

🔥 MEATUP 26 🔥 Well, the weekend is here. All the preparations by @charredfoodco and the team @millington.hall.farm will finally be open to the public. A festival to celebrate food and the ethos of fields to fork with that added vibes of a music festival. Farmers, Butchers, Market stalls, Chefs, Music artists, It's gonna be a good one! It's an honour to have been invited to cook on the live fire stage with an amazing line up of chefs and restaurant owners which is hosted by @mrandrewdickens I'll be on the live fire stage, Sunday @ 4pm cooking picanha with a roasted tomato and chilli salsa. @meatupfestival 📷 @bald_bbq_uk

STEAK 🥩 Controversial opinion that will no doubt enrage a few on here but I’ve always found steak to be overrated, therefore, I seldom eat a lot of it and certainly cook it even less than that. That said, thought I’d give it a go with it being red hot and having a well needed day-off. Treated myself to a ribeye from @longmansfarmshopandcafe. Dry brined in the fridge for 24 hours, chucked it over blazing hot coals and flipped every 30 seconds to develop a crust and finished off indirect until it reached 60° internal and left to rest. Despite all that, still somehow came out overcooked and more on the well-done side of medium-well. 🤷🏻‍♂️🙄 Seasoned with @fireandsmokesociety prime steak rub a friend of mine gave me from a recent trip to the states. Dressed with home made chimichurri. Had some potatoes leftover from yesterday and made a potato salad with them. That was shit-hot 💯. Also made a pretty simple feta garden salad alongside it. Despite overcooking the steak, still felt like I’d been punched in the face with flavour. 6.5/10 #steak #ukbbq #grill #beef #summerbbq

Tonight’s tea Grilled chicken titty with @thesmokeycarter Greek gyros rub 🐓🍗 Smash roasted new potatoes with paprika, oregano, garlic and lemon 🥔 Grilled broccoli seasoned with @lumberjaxefood cowboy butter seasoning, dressed with garlic mayo and crispy onions 🥦 Somewhat healthy if you disregard the can of leftover piss water from our housewarming do a couple of weeks ago. Quick, easy, simple but full of flavour. 8/10 #greekbbq #bbq #chicken #ukbbq #pisswater

Is chicken cooked over coals and a dash of smoking chips the perfect way to cook chicken? 🤤 Maybe. We’ll have to try it to find out 🔥 What’s your go to chicken method? Spatchcock on the rotisserie? Air fried to crispy perfection? Smothered in hot sauce and barbecued? Other?

The inaugural @embers.fire.festival in Ironbridge was a huge success with Saturday being packed out. So much going on from the @kadaiuk firestage with demos from @melissafood, @djbbq, @bignathsbbq, @onlyslaggin and many more. Compered by the amazing Shauna aka @samandshaunaofficial who had the crowd in stitches but also kept the chefs on their toes. @kamadojoeuk truck and ambassadors demonstrating just how much you can cook on them and their versatility. Great to meet @jacksmeatshack So much choice of amazing food from @embers.fire.festival, @smokey.rebel, @reclaimed_fire (chicken was gorgeous), @djbbq and more. Great vendors like @wazs_sauce_hut, @shropshiresalumi, @risdonandrisdon, @lovelogsuk, @thesmokeycarter Quick chat with the man himself @shropshire.lad who was very much in demand and bumped into @bald_bbq_uk Highlight for me was finally meeting Jim @onlyslaggin who very kindly signed his book.......yes he does have a book out 🤣 Can't wait for next year.
