What an absolute pleasure and honour it was to pair the wines for @mel_macintyre_coaching Christmas event at the absolutely incredible @vinette_edinburgh ! Gentle joyful education in a mindful Wineful way! 🤗❤️ Tonight was all about letting the @vinette_edinburgh wine list shine. I took quite some time planning and considering all our meal choices with the wines, and the balance of cost effectiveness, alongside some classic pairing considerations! If you haven't been yet. Wow. The food and wine is exquisite! Last night’s wine pairings were a joy to guide — each glass chosen to lift the dish, not dominate it. A mindful journey through weight, texture and balance 🍷✨ 🌿 We started with some of the foundations... **Match the weight: light dishes with lighter wines; richer dishes with fuller ones. **Match the texture: creamy dishes love silky wines; firmer textures need structure and acidity. **Acidity = balance: it cuts through richness and refreshes the palate. **Salt softens acidity: salt on the tongue makes wine taste smoother and fruitier — why seafood + Albariño is such a dream. **Complement or contrast: mirror flavours (buttery with buttery) or brighten them (citrus wine with scallops). **Tannins + protein: meat proteins softens tannins, making reds feel rounder. When these elements align, food and wine feel like they’re in conversation! Joyful 🥰 🫧 Crémant d’Alsace Fresh orchard fruit, fine bubbles and a touch of brioche — a bright, elegant welcome. Possibly my fav crémant! 🐚 Albariño – O’Equilibrio 2022 Citrus, peach and Atlantic salinity. Paired with: scallops, beetroot, monkfish dishes— acidity cutting sweetness, minerality echoing the sea, and salt lifting the fruit. Pure vibrancy 🌼 Crozes-Hermitage Blanc – Laurent Habrard 2020 Silky, honeyed, gently aromatic. Paired with: parfait, Baron Bigod, chicken roulade, mushroom quiche dishes. All about weight and texture matching — creamy dishes meeting a creamy, textural wine. 🍒 ‘Quite’ Mencía – Veronica Ortega 2022 Juicy red berries, violets, soft tannins. Paired with: venison, pork, burgers - fresh fruit lifting richness, tannins softened by protein, acidity keeping everything light.

It was the brilliant Maya Angelou that said: “There is no greater agony than bearing an untold story inside you.” When we share our stories, we don’t just entertain - we connect. And the art of storytelling isn’t just in the delivery of the tale … it’s in the active listening … where someone is willing or often needing to hear it. This is what we help our clients with every day, and why we find opportunities for our motivational speakers to share theirs. In the whirlwind of busy schedules and surface-level conversations, it’s easy to forget that every person we meet is carrying a world inside them, so please always share your story and ask someone else for theirs. During November, we have listened to magnificent and thought provoking stories, shared our own and told the latest stories from our clients – check it out  #storytelling #motivaton #inspirational
