It’s nearly Autumn…. Yr Hydref!
My favourite season 🧡

The hot summer has brought on an early crop of fruit… the Welsh blackberries are ready, ripe for picking.

This recipe just needs just a handful of berries combined with the seasons apples, and you can make a delicious upside-down cake.

Here it is as featured on @bbccymruwales on The Mid Week Menu with @behnazakhgar only yesterday ✨

You’ll need..
150g caster sugar
150g quality spread / margarine
150g self-raising flour
150g ground almonds
2 large free-range eggs
2 apples/pears/ handful of berries

50g butter
50g runny honey
50g caster sugar

Method

Pre-heat the oven to 180°C/ gas mark 4
Cream the butter and the sugar together, then add the eggs followed by the almonds and flour and mix well.
In a frying pan, heat the sugar, honey and butter over a medium heat until it begins to melt and bubble, then turn down the heat.
Add the sliced apples and allow to simmer until the apples soften slightly.

Carefully, pour the apples and the caramel into a lined shallow oven-proof tin or dish, and add a handful of blackberries.
Pour the cake mixture on top and spread out to cover the fruit. Bake in the centre of the oven for about 30 - 40 minutes.
Serve with cream, crème fraîche, custard or ice cream 💜
Enjoy ☺️

I’ll share the mussels recipe soon or check it out on @bbccymruwales online

🌑Wonderful to be LIVE on BBC Radio Wales yesterday with the inimitable @behnazakhgar discussing the UK eclipse last night & the BBC Radio Wales report I broadcast exactly 27 years ago 11th August 1999 10,000 feet above Cornwall in a light aircraft to witness the historical Total Eclipse. Behnaz Akhgar is a wonderful person who met my brother Gareth Griffiths recently at a Health Event & wished him well in this attached broadcast. ☀️

Giovanni, Actor and Restaurateur, tells BBC Radio Wales about filming Bravado in his own restaurants.

He says the best part is the people, and we have to agree. Working with @giovannimalacrino is a dream, especially when he brings the best food to set!
Thank you @giovannisonthehayescardiff for providing the best catering a film set has ever seen!

⭐ Dinner with the Stars ⭐

What a fantastic evening Friday at the lovely @decourceysmanor supporting @calonheartsuk and the incredible work they do, raising vital funds for lifesaving heart screening across Wales.

Our ⭐️ stars were proud to be part of the evening, swapping the stage for serving trays as they helped serve dinner to guests in support of this incredible charity. 🍽️
